40 chicken wing pieces or 20 whole chicken wings
2 tablespoons Chinese five-spice powder
1 tablespoon cayenne pepper
Kosher salt and freshly ground black pepper
Creamy Cilantro Dipping Sauce, recipe follows
1/3 cup chopped fresh cilantro leaves
1/4 cup light sour cream
1/4 cup mayonnaise
1/4 cup yogurt
1/2 lemon, juiced
Kosher salt and freshly ground black pepper

Steps:

  • Preheat oven to 500 degrees F.
  • If you have whole chicken wings, cut off wingtips and cut the wings in half at the joint. Discard wingtips or freeze to make stock.
  • Place the wings in a large bowl. Sprinkle five-spice powder and cayenne on the wings; add generous pinches of salt and about 15 grinds of black pepper. Rub the mixture into all the wings until no more loose rub remains.

1 tablespoon soy sauce
4 teaspoons soy sauce

Steps:

  • In a medium bowl, combine the chicken with 1 tablespoon of soy sauce, 1 tablespoon of the sherry and the cayenne. Let marinate for 10 minutes.
  • In a wok or large frying pan, heat 1 tablespoon of the oil over moderately high heat. Add the chicken and cook, stirring, until almost done, 1-2 minutes. Remove.

4 slices bacon
1 tablespoon bacon drippings
¼ cup all-purpose flour
½ teaspoon kosher salt
½ teaspoon smoked paprika
2 pounds skinless chicken thighs
1 red onion, sliced
1 large apple, cored and sliced
1 head red cabbage, cored and sliced
½ cup red wine vinegar
¼ cup dry red wine
¼ cup brown sugar
½ teaspoon ground cinnamon

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large oven-safe or cast-iron skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. When cool, crumble bacon; leave bacon drippings in the skillet.
