Every time my family and I go to a Chinese buffet we make a bee line for the green beans! This is a simple and tasty re-creation of that much loved side dish, goes well with any Asian meal. Make sure to slice the garlic, don't use a garlic press. Oyster sauce can be found in the Asian section of your grocery store, at an Asian grocery store, and online.

CHINESE "DRY-FRIED" GREEN BEANS
Steps:
- Preparing the ingredients: Wash the green beans, drain thoroughly, and trim the tops and bottoms. Cut the green beans on the diagonal into slices approximately 2 inches long. Chop the garlic, ginger and scallions. Dry-Frying: Heat 1 tablespoon oil over medium heat. Add the green beans and stir-fry until they start to shrivel or "pucker" and turn brown (6 to 7 minutes for longbeans). Remove the green beans from the wok and drain in a colander. Cooking the aromatics: Heat 1 tablespoon oil in the wok on high heat. Add the garlic, ginger and scallions. Stir-fry for a few seconds, then add the chili paste and stir-fry for a few more seconds until aromatic. Assembling: Add the green beans and the dark soy sauce, sugar, salt, and pepper if using. - In a large pan or wok, heat the oil over high. Fry the string beans until they start blistering. Remove the string beans.
- In the same pan or wok, add the garlic, ginger, and scallions. Fry until fragrant.

- Wash beans, trim ends and remove strings.
- Arrange beans in a vegetable steamer (or a colander that will sit nicely in saucepan), and place over boiling water.
- Cover and steam 5 minutes.
- Drain and plunge into cold water, drain again.
- Coat a large nonstick skillet (or wok) with cooking spray or peanut oil and heat until hot.
- Add gingerroot and garlic and saute 30 secs.
- Add beans, saute 5 minutes.
- Combine 2 tablespoons water and remaining 5 ingredients.
- Stir well.
- Add to beans, cook 30 seconds or until thoroughly heated, stirring constantly.
CHINESE GROUND PORK AND GREEN BEANS
This is one of my three favorite Chinese dishes. Equally good with ground beef. In this day and age, I expect some people to dry fry the green beans in a hot skillet, but deep frying them quickly doesn't add much if any oil and it draws out the moisture nicely. Another possibility would be to toss the trimmed green beans with a tablespoon of peanut oil and roast at 500 degrees F for 10 to 15 minutes. The idea is to get moisture out of the beans so they will absorb the sauce. Prepare ingredients ahead of time and this will come together quickly. To tell the truth, I double or triple the garlic, scallions and ginger, and use half to 3/4 teaspoon hot bean paste, but this is more or less the original recipe. Feel free to adapt to your taste. I like spicy but not hot. The prep time does not include mincing, chopping, trimming the vegetables.

- Trim the green beans. Heat oil for deep frying to 375 degrees. Deep fry green beans for 1-2 minutes, until wrinkled. You may want to do this in batches to prevent the oil temperature from dropping. Drain on paper towels. You may do this step ahead of time and refrigerate but be sure to bring the green beans back to room temperature before proceeding.
- Mix sauce ingredients and set aside.
- Heat wok or skillet over medium high to high heat, add 2 T oil, swirl to cover the surface and heat a few seconds. Turn heat to medium and put in the garlic, scallions and ginger and stir fry a minute or two.
- Turn heat back up to medium high; crumble ground pork into the seasonings in the wok and stir fry, breaking up large lumps, until the meat no longer is pink.
- Pour the sauce over the meat and stir quickly a few times to season evenly. Add the 1/4 cup of broth, even out the meat, cover and let it steam-cook vigorously for 3 to 4 minutes. (I set the lid ajar so the sauce will cook down a bit).
- Turn heat high, add the green beans and toss and stir until the sauce thoroughly coats the beans and the meat clings nicely to them.
- Splash in the 1 t cider vinegar and 1 t sesame oil, give the contents a good fast turn or two and serve over rice.

- Rinse green beans and trim ends off. Leave beans in long lengths.

- 1. Combine the soy, honey and 1 tablespoon water in a small dish and set near the stove. Set a shallow serving dish near the stove also. 2. in a 10 inch straight sided saute pan, heat the butter with the oil over medium-high heat. When the butter is melted, add the green beans and 1/2 teaspoon salt and toss with tongs to coat well. 3. Cook, turning the beans occasionally, until most are well browned, shrunken and tender, 7 to 8 minutes. Note that the butter in the pan will have turned dark brown. 4. Reduce the heat to low, add the garlic and cook stirring constantly with a heatproof rubber spatula, until the garlic is softened and fragrant, 15 to 20 seconds. 5. Carefully add the soy mixture. Cook, stirring until the liquid reduces to a glazey consistency that coats the beans, 30 to 45 seconds. 6. - Heat peanut oil in wok. Cook beans over mod. high heat til well wilted and partially blackened. Remove from wok. Turn off heat and add the garlic, ginger and chili paste. Add a little more oil if needed. Let this sit a minute or two in the wok. Mix together sauce ingredients. Turn heat back on, add sauce ingredients and beans. Saute until sauce is reduced and glazes the beans. Top with a little sesame oil.
CHINESE ROASTED DUCK SALAD WITH ENDIVE, GREEN BEANS AND HOISIN-BALSAMIC VINAIGRETTE

- To prepare the vinaigrette, in a blender combine the mustard, vinegars, hoisin sauce, garlic, ginger, and shallots and puree until smooth.
