Every time my family and I go to a Chinese buffet we make a bee line for the green beans! This is a simple and tasty re-creation of that much loved side dish, goes well with any Asian meal. Make sure to slice the garlic, don't use a garlic press. Oyster sauce can be found in the Asian section of your grocery store, at an Asian grocery store, and online.

1 tablespoon oil, peanut or sesame
2 cloves garlic, thinly sliced
1 pound fresh green beans, trimmed
1 tablespoon white sugar
2 tablespoons oyster sauce
2 teaspoons soy sauce

  • Heat peanut oil in a wok or large skillet over medium-high heat. Stir in the garlic, and cook until the edges begin to brown, about 20 seconds. 1 lb string bean
1 tablespoon garlic
1 teaspoon ginger
3 scallions, chopped
4 oz shiitake mushrooms
½ lb ground pork
4 dried red chilies
1 tablespoon chili paste
2 tablespoons soy sauce
1 tablespoon rice wine
white pepper, dash

Steps:

  • In a large pan or wok, heat the oil over high. Fry the string beans until they start blistering. Remove the string beans.
  • In the same pan or wok, add the garlic, ginger, and scallions. Fry until fragrant.

1 teaspoon gingerroot, peeled, minced
1 garlic clove, minced
2 tablespoons water
1 tablespoon soy sauce
1 teaspoon cornstarch
1/2 teaspoon brown sugar
1/2 teaspoon sesame oil
1/4 teaspoon crushed red pepper flakes

Steps:

  • Wash beans, trim ends and remove strings.

I love the green beans found on Chinese Restaurant buffets! They are the bomb! I could easily pay for the entire buffet and only eat the green beans! I found this recipe while searching for the technique online as I was told the secret was that they were Dry-Fried. Oh Yum! Thanks to Ronda Parkenson for the recipe I adapted. I found that I did not need as much oil when making this recipe....so i reduced the oil amounts to what I used, if it does not look like enough for you, feel free to add more.

1 lb green beans
1 tablespoon chinese black bean sauce (available at Asian markets)
1 tablespoon dark soy sauce or 1 tablespoon tamari
2 teaspoons dry sherry or 2 teaspoons rice vinegar
1 1/2 teaspoons sugar
1 tablespoon chopped garlic
1 tablespoon chopped ginger
2 scallions, chopped, white part only
1/2 teaspoon chili paste or 4 -6 small dried red chilies
2 tablespoons peanut oil, for stir-frying more if needed
1 teaspoon sesame oil, for stir-frying (can use peanut oil, your preference)

Steps:

  • Wash the green beans and pat dry with paper towel. Cut ends on the diagonal leaving beans long.
  • Combine the sauce ingredients and set aside.
  • Warm a wok over medium heat and add 2 tablespoons peanut oil. Drizzle oil down the sides of the wok.
  • Once the oil is heated, add the green beans. Stir-fry for about 10 minutes, or until the skins pucker and turn brown and the green beans are tender (NOT mushy). Remove the beans from the wok.
