CHAR SIU (CHINESE BBQ PORK)

Char Siu (Chinese BBQ Pork) image

"Char siu" literally means "fork roast" - "char" being "fork" (both noun and verb) and "siu" being "roast" - after the traditional cooking method for the dish: long strips of seasoned boneless pork are skewered with long forks and placed in a covered oven or over a fire. This is best cooked over charcoal, but it's important to cook with indirect heat.

Time 3h40m

Yield 4

Number Of Ingredients 9

2 pork tenderloins
½ cup soy sauce
⅓ cup honey
⅓ cup ketchup
⅓ cup brown sugar
¼ cup Chinese rice wine
2 tablespoons hoisin sauce
½ teaspoon red food coloring
1 teaspoon Chinese five-spice powder

Steps:

  • Cut pork with the grain into strips 1 1/2- to 2-inches long; put into a large resealable plastic bag.
  • Stir soy sauce, honey, ketchup, brown sugar, rice wine, hoisin sauce, red food coloring or red bean curd (see Cook's Note), and Chinese five-spice powder together in a saucepan over medium-low heat. Cook and stir until just combined and slightly warm, 2 to 3 minutes. Pour the marinade into the bag with the pork, squeeze air from the bag, and seal. Turn bag a few times to coat all pork pieces in marinade.
  • Marinate pork in refrigerator, 2 hours to overnight.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove pork from marinade and shake to remove excess liquid. Discard remaining marinade.
  • Cook pork on preheated grill for 20 minutes. Put a small container of water onto the grill and continue cooking, turning the pork regularly, until cooked through, about 1 hour. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

CHINESE-STYLE GLAZED PORK BELLY RECIPE BY TASTY

Chinese-style Glazed Pork Belly Recipe by Tasty image

This Chinese-style pork belly is sweet, salty, and perfectly tender. Slowly cooking the pork in a flavorful mixture of garlic, ginger, and brown sugar gives it that signature sticky-sweet glaze that pairs perfectly with salty soy sauce. Serve it over rice for the ultimate dinner and forget you ever wanted to order take-out.

Time 1h

Yield 2 servings

Number Of Ingredients 12

20 oz pork belly, lean
4 cups water, plus 250 milliliters, divided
4 slices of fresh ginger
1 spring onion, cut into 2-inch (5 cm) pieces
2 cloves garlic, crushed
2 tablespoons oil
2 tablespoons brown sugar
3 tablespoons light soy sauce
3 tablespoons dark soy sauce
3 tablespoons shaoxing rice wine
cooked rice, for serving
sliced green onion, for serving

Steps:

  • Cut the pork belly into roughly 1-inch (2 ½ cm) cubes.
  • Bring 1 liter of water to a boil in a pot, then add the pork, ginger, onion, and garlic, and cook for 3-4 minutes.
  • Remove the pork from the water using a slotted spoon and drain on a plate lined with a paper towel. Discard the remaining water and vegetables.
  • Clean and dry the pot, then return it to high heat and add the olive oil. Return the pork to the pan and cook until browned. The oil may pop and splatter, so be careful.
  • Add the brown sugar, then reduce the heat to low. Stir continuously until the sugar has melted, caramelized, and coated the pork evenly.
  • Immediately add the soy sauces and rice wine, stirring continuously for 5-6 minutes more, or until the liquid has reduced to a thick glaze.
  • Add the remaining 250 milliliters of water. Stir, cover, and simmer for about 45 minutes. Make sure the mixture is at a low simmer, not boiling. Stir every 10 minutes or so, adding more water if the pot is getting dry.
  • Remove the lid. The sauce should coat the pork in a very thick glaze. If it is too runny, continue to stir, uncovered, until the liquid has reduced.
  • Serve immediately over a bowl of rice and sprinkle with sliced green onions.

CHINESE PORK SLICES

Chinese Pork Slices image

In Canada, when we order chinese food, we always get this as an appetizer and I finally got this recipe right after much tweaking. It's flavour is right on and the pork is very tender. Does not include marinating time.

Categories     Pork

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 12

1/3 cup soya sauce
1/3 cup honey
2 tablespoons brown sugar
1 tablespoon teriyaki sauce
1 1/2 tablespoons lemon juice
2 tablespoons Worcestershire sauce
1 tablespoon dry mustard
1 teaspoon black pepper
1/8 teaspoon cayenne pepper
2 garlic cloves, minced
10 drops red food coloring
2 (1 1/2 lb) pork tenderloin, about 3 lbs. total

Steps:

  • Mix all ingredients except pork.
  • Place pork and marinade in a ziplock bag.
  • Keep in fridge 24 hours turning bag occasionally.
  • Preheat oven to 425.
  • Place pork on a foil-lined baking sheet.
  • Roast for 25-30 minute.
  • Let sit for 5 minute before slicing into medallions.

Tips:

  • Choose the right cut of pork: Pork shoulder or pork tenderloin are both good choices for this dish. Pork shoulder is a more affordable cut, but it has more fat. Pork tenderloin is a leaner cut, but it can be more expensive.
  • Slice the pork thinly: This will help the pork cook evenly and quickly.
  • Marinate the pork: Marinating the pork in a mixture of soy sauce, rice wine, Chinese five-spice powder, and ginger will help to tenderize the pork and give it flavor.
  • Use a hot wok: A hot wok will help to sear the pork and prevent it from sticking.
  • Stir-fry the pork in small batches: This will help to prevent the pork from overcrowding the wok and steaming instead of stir-frying.
  • Add the vegetables towards the end of cooking: This will help to prevent the vegetables from overcooking.
  • Serve the pork over rice: This is a classic Chinese dish that is often served over rice.

Conclusion:

Chinese pork slices is a delicious and easy-to-make dish that is perfect for a weeknight meal. With a few simple ingredients and a little bit of time, you can create a flavorful and satisfying dish that your family and friends will love. So next time you're looking for a quick and easy dinner idea, give Chinese pork slices a try. You won't be disappointed!
