Steps:

  • Toss corn kernels and sliced bell pepper with lemon juice, olive oil and salt. Lightly mix 6 ounces ground beef chuck with a big pinch of kosher salt. Form into a ball, then shape into a 3/4-inch-thick patty; make an indentation in the center. Preheat a grill to high; brush the grates and burger with canola oil. Season the patty with salt and cumin and grill about 4 minutes per side.
  • Mix 1/4 cup mayonnaise, 1 tablespoon minced chipotles in adobo and a splash of lemon juice. Serve the burgers on a crusty bun with chipotle mayonnaise, the corn salsa, onion, tomato and cilantro.

8 slices SARGENTO® Deli Style Sliced Chipotle Cheddar Cheese
2 pounds lean ground beef
2 cups medium salsa, divided
1 cup finely crushed tortilla chips, divided
1 cup chopped green onions, divided
1 tablespoon garlic salt
1 tablespoon chili powder
8 hamburger buns, split

Steps:

  • Preheat grill to medium-high heat. Make drainage holes in a sheet of Reynolds Wrap® Non-Stick Foil with a grilling fork; set aside.
  • Combine ground beef, 1 cup salsa, 1/2 cup tortilla chips, 1/2 cup green onions, garlic salt and chili powder in large bowl until well blended. Shape beef mixture into 8 burgers, 4 inches in diameter and 1/2inch thick.
  • Place foil sheet on grill grate with nonstick (dull) side facing up. Immediately place burgers on foil.
  • Grill burgers uncovered, 5 minutes each side or until no longer pink in center. Grill or lightly toast hamburger buns. Top burgers with 1 slice cheese before removing from grill let melt. Place burgers on buns. Top with remaining salsa, tortilla chips and green onions.

2 tablespoons canned chipotle chiles in adobo, including sauce
1 lb ground beef chuck
1/2 cup finely chopped onion
1 teaspoon salt
4 English muffins or hamburger buns, halved horizontally

Steps:

  • Prepare grill for cooking over medium-hot charcoal (moderate heat for gas); see "Grilling Procedure," below.
  • Meanwhile, open any whole chipotles and discard seeds, then mince chipotles.
  • Mix chipotles (with sauce), beef, onion, and salt with your hands, then form mixture into 4 (3/4-inch-thick) patties.
  • Grill burgers on lightly oiled grill rack, covered only if using gas grill, turning over once, 4 minutes total for medium-rare. Grill English muffins, cut sides down, until grill marks appear, about 30 seconds. Serve burgers in English muffins.
  • Grilling Procedure
  • If using a charcoal grill, open vents on bottom of grill, then light charcoal. When charcoal turns grayish white (about 15 minutes from lighting), hold your hand 5 inches above grill rack to determine heat for charcoal as follows:
  • Hot: When you can hold your hand there for 1 to 2 seconds
  • Medium-hot: 3 to 4 seconds
  • Low: 5 to 6 seconds
  • If using a gas grill, preheat burners on high, covered, 10 minutes, then, if necessary, reduce to heat specified in recipe.

My husband loves these with garlic roasted chicken or veggie soup. I can't remember where the recipe originated. For a variation, add a small can of yellow corn to the batter. Good on a cold winter night. Medium hot on the heat scale.

1 cup yellow cornmeal
2 eggs
3/4 cup plain yogurt
4 teaspoons oil
3 chipotle chiles in adobo, drained & minced or 3 dried chipotle chiles, that have bee rehydrated in hot water
1/4 cup cheddar cheese

Steps:

  • Pre-heat oven to 425 degrees.
  • Spray muffin tins lightly with oil.
  • Mix together baking soda, baking powder, salt, and cornmeal in a small bowl.
  • In a separate bowl, beat the eggs with yogurt.
  • Stir in the chipotles& cheese; then gently stir the egg mix into the cornmeal mix just until combined.

From Better Home and Gardens - Delicious! They are burger patties, but the full recipe from BH&G says to serve them on tostadas and they are marvelous that way! We made our own tostadas using corn tortillas and frying them in an inch of olive oil. Perfection!

2 (15 ounce) cans black beans, rinsed and drained
1 (14 ounce) can whole kernel corn, drained
2 cups Fritos corn chips, finely crushed (about 1 cup crushed)
1 cup cooked brown rice
1/2 cup finely chopped red onion
1/2 cup bottled chunky salsa
2 -3 teaspoons finely chopped canned chipotle chiles in adobo
1 teaspoon ground cumin
2 garlic cloves, minced
2 tablespoons olive oil
8 tostadas, heated according to package directions (optional)
bottled chunky salsa (optional)
finely shredded green cabbage (optional)
fresh cilantro leaves (optional)
crumbled queso fresco (optional)
avocado, slices (optional)

Steps:

  • In a large bowl mash half the beans with a potato masher or pastry blender until well mashed. Add remaining beans, corn, corn chips, rice, onion, the 1/2 cup salsa, the chipotle peppers, cumin, and garlic.
  • Shape mixture into eight 4-inch patties, about 3/4-inch thick. Place patties on a tray; cover and chill at least 1 hour before grilling.
  • Brush both sides of patties with olive oil; place patties on a grill pan. For a charcoal grill, place grill pan on the grill rack directly over medium coals for 8 to 10 minutes or until browned, turning once. (For a gas grill, preheat grill. Reduce heat to medium. Add patties on grill pan to grill rack, cover and grill as above.).
  • Serve burgers on tostada shells. Top with additional salsa, cabbage, cilantro, cheese, and avocado. Makes 8 servings.
  • Tip: Patties can be prepared as above through step 2 and frozen for 3 to 4 hours until firm. Place patties in an airtight freezer container and freeze up to 1 month. To serve, brush frozen patties with oil and grill as above for 8 to 10 minutes or until browned, turning once.

6 tablespoons unsalted butter, melted, cooled
2 tablespoons minced seeded canned chipotle chilies

Steps:

  • Preheat oven to 375°F. Butter 9 x 5 x 2 1/2-inch metal loaf pan. Mix first 6 ingredients in large bowl. Stir in cheese. Whisk buttermilk, eggs, melted butter and chipotles in medium bowl. Add buttermilk mixture to dry ingredients; stir until blended. Spoon batter into prepared pan. Bake bread until tester inserted into center comes out clean, about 35 minutes. Cool in pan on rack 15 minutes. Turn bread out onto rack; cool completely.
