Making mayo from scratch is super easy and this chipotle lime flavoured version is amazing! Not only that, if you use free run/range eggs and quality oil, it's much better for you than the pre-made stuff! The only downer is because we are using raw egg yolks, it only has a 5 day shelf life...so no big batches.

Number Of Ingredients 10

1 egg yolk
2 tablespoons lime juice
1 tablespoon Dijon mustard
1 clove garlic (minced) - optional
1 tablespoon chipotle pepper (chopped fine)
¾ - 1 cup extra virgin olive oil
1 - 2 tablespoons maple syrup
¼ cup cilantro (chopped fine)
¼ teaspoon sea salt
¼ teaspoon fresh ground pepper

Steps:

  • Add the yolk, lime juice, mustard, garlic and chipotle to a mixing bowl and whisk together.
  • Continue whisking, while gradually adding the olive oil in a slow steady stream. It must be added slowly or it will not emulsify.
  • The more olive oil you add, the thicker the mayo will be, but only up to a certain point. So once you get a nice consistency, stop adding oil.
  • Stir in the maple syrup, cilantro, salt and pepper and keep your delicious mayo in the fridge for up to 5 days.

CHIPOTLE MAYO

This recipe is super easy with a food processor! Use this mayo on cold cut sandwiches or mixed with canned fish. Don't use Miracle Whip or salad dressing for this. Neither one qualifies as mayonnaise and are not as thick as the real thing, which will make your result much runnier. You can get the chipotle chiles in adobo sauce at a supermarket with a good variety of more authentic Mexican items. They are either canned or bottled.
