Steps:

  • Preheat oven to 350 degrees Fahrenheit. Line cookie sheets with parchment paper; set aside.

2 cups packed light brown sugar (if you don't have light brown, dark brown works just fine)
2 eggs

3 cups quick-cooking oats

  • Heat oven to 350 degrees. Sift together flour and baking soda, and set aside. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugars on medium-high speed until light and fluffy, 2 to 3 minutes.
