PUMPKIN CHOCOLATE CHIP OATMEAL COOKIE BARS

Pumpkin Chocolate Chip Oatmeal Cookie Bars image

I was restless and bored one night and couldn't sleep so I decided to bake something. After raiding the kitchen this is what I threw together. I love that it has a mild sweetness and isn't over powering. So, if you prefer really sweet things I suggest you add more sugar. I also love how light these are.

Number Of Ingredients 10

2 cups Old Fashioned rolled oats
1/2 cup Pecans, chopped
2 tablespoons Chia Seeds
2 teaspoons Pumpkin Pie Spice
1/4 teaspoon Salt
1/2 cup Pumpkin Puree
1/4 cup Coconut Oil, melted
1/3 cup Maple Syrup
1 teaspoon Vanilla Extract
1/3 cup Mini Chocolate Chips

Steps:

  • Preheat oven to 350 degrees. Line an 8"x 8" baking pan with parchment paper. Let it over hang the edges of the pan.
  • Spray paper with cooking spray i.e. Pam
  • Combine first 5 ingredients in a medium bowl.
  • Combine remaining ingredients, except for the chocolate chips, in a small bowl.
  • Pour into the dry mixture and combine well.
  • Mix in chocolate chips
  • Press mixture firmly into the prepared pan.
  • Bake for 25 min. Remove from the oven and cool for at least 10 min or longer.
  • Lift the edges of the parchment paper to remove and cut into 12 or 16 bars depending on your choice of size
  • Store in an air tight container for 3 days or in the refrigerator for 1 week.

Tips:

  • Choose the right pumpkin. Look for a sugar pumpkin or pie pumpkin, which are small and have a sweet, dense flavor. Avoid using a large, field pumpkin, which is too watery for baking.
  • Cook the pumpkin until it's very soft. This will help to ensure that the bars are moist and flavorful. You can cook the pumpkin in the microwave, in a slow cooker, or in the oven.
  • Use a combination of spices. Pumpkin pie spice is a classic choice, but you can also use cinnamon, nutmeg, ginger, and allspice. Experiment with different combinations to find your favorite flavor profile.
  • Don't overmix the batter. Overmixing can make the bars tough. Mix just until the ingredients are combined.
  • Let the bars cool completely before cutting them. This will help to prevent them from falling apart.

Conclusion:

Chocolate chip pumpkin bars are a delicious and festive fall treat. They're perfect for Halloween parties, Thanksgiving gatherings, or just a cozy night in. With their moist texture, sweet pumpkin flavor, and chocolate chips, these bars are sure to be a hit.
