1 ½ cups chocolate graham cracker crumbs
½ cup butter, melted
1 cup chopped walnuts
¾ cup dark chocolate chips
¾ cup white chocolate chips
1 cup sweetened flaked coconut
1 (14 ounce) can sweetened condensed milk
⅓ cup seedless raspberry preserves, or more to taste

Steps:

This recipe blends the dense, pan-baked goodness of a bar with layers of cheesecake and cookie dough that are dotted with white chocolate and fresh raspberries. There is no bake-off or bake sale that you can't win with these.

1 cup (2 sticks/225 g) unsalted butter, at room temperature
1/2 cup (110 g) brown sugar
1 1/2 cups (300 g) granulated sugar
2 large eggs
2 1/2 teaspoons vanilla extract
2 1/2 cups (315 g) all-purpose flour
1 teaspoon kosher salt
1 teaspoon baking soda
1 teaspoon baking powder
1 1/4 cups (205 g) white chocolate chips
1 cup (125 g) fresh raspberries
8 ounces (225 g) cream cheese, at room temperature

1 large egg

Steps:

  • To make the cookie layer: In a stand mixer, cream together the butter, brown sugar, and granulated sugar for 3 minutes, until smooth. Add the eggs and vanilla and continue to mix, scraping down the sides of the bowl. Add the flour, salt, baking soda, and baking powder and mix on low speed until the ingredients are incorporated. With the Christmas holidays drawing near, I thought these would be a great addition to cookie & sweet trays! They are quite an attractive looking bar and they look nice cut into triangles. You can even substitute your favourite jam, such as apricot, peach & strawberry, but I think the raspberry (or the strawberry), red in colour for Christmas would be nicest! Found this recipe in a booklet of baking recipes that I picked up at the grocery store put out by Robin Hood flour. Add 1 1/2 hrs. to the cook time listed for chilling. These are supposed to freeze well for those of you who want to get a head start on your holiday baking! Hope you enjoy!

They are a rather flat - they will be tall and puffy when they come out of the oven, with oozing craters of jam. However, when cooled they wil only be about 1/2"-1" tall - this is normal.

32 crisp chocolate cookies, finely crushed (2" in diameter)
1/4 cup granulated sugar
24 ounces neufchatel cheese or 24 ounces cream cheese, softened

1/2 cup light sour cream or 1/2 cup sour cream
1 teaspoon vanilla extract
2 ounces semisweet chocolate, melted,cooled slightly

  • Preheat oven to 325°F.
  • Combine butter and crushed cookies for crust and press into the bottom only of a lightly greased 9x13" pan.

  • Hold a dinner knife vertically and pull through batter in a zig zag pattern from one end of the pan to the other to create a somewhat marbled appearance (without overswirling).
  • Bake 50-55 minutes or until center of cheesecake jiggles slightly when pan is gently shaken; DO NOT OVERBAKE or it will dry out.
  • Cool in pan on wire rack completely (it may crack a bit on top as it cools- this is normal).
  • Once cooled to room temperature, cover and chill up to 1 day.
  • Cut into 16 large squares (or 32 small ones) and serve garnished as desired; keep leftovers chilled.
