I make these every year for Christmas goodies and my husband hides them from everybody! They take about two weeks for the centers to get soft. Number Of Ingredients 7

2 (10 ounce) jars maraschino cherries (need 50 cherries)
3 tablespoons butter
3 tablespoons light corn syrup
1/4 teaspoon salt
2 cups powdered sugar
1 (12 ounce) package semi-sweet chocolate chips
1 tablespoon shortening

  • Drain the cherries; pat dry on paper towels, and set aside.
  • In mixer bowl beat butter, corn syrup, and salt until well combined.
  • Stir in powdered sugar and knead until smooth (mixture will be very stiff).
  • Shape 1/2 teaspoon of sugar mixture around each cherry (make sure the cherries are dry so the sugar mixture will stick).

Tips:

  • Use fresh, plump cherries: The quality of your cherries will greatly impact the final product. Look for cherries that are deep red in color and free of blemishes.
  • Pit the cherries: Using a cherry pitter will make this task quick and easy. If you don't have a cherry pitter, you can also use a paring knife to carefully remove the pits.
  • Dry the cherries thoroughly: This will help the chocolate adhere to the cherries and prevent them from becoming soggy. You can dry the cherries in a dehydrator, in the oven, or on a baking sheet in a warm, dry place.
  • Use high-quality chocolate: The type of chocolate you use will also affect the final product. For the best results, use a high-quality chocolate that contains at least 70% cocoa solids.
  • Temper the chocolate: Tempering the chocolate will help it set properly and give it a smooth, glossy finish. There are several methods for tempering chocolate, so choose one that works best for you.
  • Be patient: Making chocolate-covered dried cherries takes time and patience. Don't rush the process, or you'll end up with subpar results.

Conclusion:

Chocolate-covered dried cherries are a delicious and versatile treat that can be enjoyed on their own, used as a topping for desserts, or added to trail mix. They're also a great gift idea for friends and family. With a little time and effort, you can easily make your own chocolate-covered dried cherries at home. So what are you waiting for?
