  • For sauce:
  • Bring cream, liqueur, sugar, and vanilla to boil in heavy medium saucepan over medium-high heat, stirring frequently. Preheat oven to 350 degrees F.

Steps:

  • In a food processor, combine butter and sugar process until well blended. Add cinnamon, and vanilla, and pulse to combine.
  • While the processor is running crack 5 eggs into the mixture. Turn off the mixer and scrape down the sides. Add the heavy cream and pulse to combine.
  • Lightly butter a 9 by 13-inch baking dish. Break up the croissants into 1-inch pieces and layer in the pan. Scatter the raisins and shaved bittersweet chocolate over the top, and gently mix to incorporate. Pour the egg mixture over the croissants; soak for 8 to 10 minutes. You will need to push croissants pieces down during this time to ensure even coverage by egg mixture.

1 cup/240 milliliters whole milk
1 large egg yolk
5 tablespoons plus 1 teaspoon/75 grams granulated sugar
5 tablespoons/30 grams Dutch-process cocoa powder
1 tablespoon cornstarch
Pinch of kosher salt
1 1/2 teaspoons vanilla extract
1/2 cup/80 grams fresh raspberries
1/3 cup/80 milliliters heavy cream

Steps:

  • Add the milk and egg yolk to a measuring cup. Whisk to combine.
  • Add 5 tablespoons sugar, the cocoa powder, cornstarch and salt to a medium saucepan, and whisk to combine, breaking up any lumps. Whisk the milk and egg yolk mixture into the sugar mixture until smooth.
  • Set the pan over medium-low heat and cook the mixture until it thickens and starts to bubble, stirring the mixture constantly with a rubber spatula and making sure to scrape the corners and bottom of the pan. 1/4 cup cornstarch
2 tablespoons cornstarch
1 teaspoon salt
4 cups milk

  • Cooking on stovetop.
  • Bake pie shell. Stir together sugar, cornstarch (Cornstarch is 1/4 C PLUS 2 T - I was unable to enter that amount as one ingredient)and salt in saucepan. Blend milk and egg yolks; gradually stir into sugar mixture. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.   • Coconut Cream Pie:.
  • Decrease Vanilla to 2 teaspoons and stir in 1°C flaked coconut. Sprinkle flaked coconut over whipped cream on pie.
  • Banana Pudding:.
  • Make Vanilla Cream. Cool for 15-20 minutes. While cooling, line bottom of pan with vanilla wafers and top with sliced bananas.
  • Cover with cooled pudding. Top with heavy cream (for every 8 oz of heavy cream add 4 t of sugar -- whip cream until stiff. Crush a few wafers and sprinkle on top.

2 cups half-and-half

3 cups fresh Fredericksburg peaches, peeled and chopped into bite-size pieces

Steps:

  • Preheat oven to 350 degrees. Butter a 13-by-9-inch baking dish; set aside. In a 2-quart saucepan, combine the white chocolate, half-and-half, cinnamon, and butter. Cook over medium-low heat, stirring often, until smooth. Remove from heat and set aside.

  • For the praline: Lightly oil a baking sheet or line it with a silicone baking mat. Combine the sugar and water in a small saucepan and cook over moderate heat, stirring until the sugar dissolves. Continue cooking without stirring until the sugar syrup turns to dark caramel, 5 to 7 minutes, swirling the pan occasionally and gently so the caramel darkens evenly. Monitor the caramel closely during the final moments as it can quickly go from perfect to burnt. Work cautiously, as hot caramel can cause a nasty burn.
  • Stir in the pecans, then immediately pour the hot praline onto the prepared baking sheet in a thin, even layer. Let cool until hard, then break into small pieces.

12 ounces/340 grams thin wafer cookies, such as gingerbread, vanilla wafers or chocolate wafers

Steps:

  • Make the pudding: Place chocolate in a large bowl; set aside.
  • Heat heavy cream, milk, cocoa powder and 3/4 cup/150 grams granulated sugar in a medium pot over medium-high, whisking constantly until the mixture comes to a bare simmer, about 8 to 10 minutes. Remove from heat.
  • In a large bowl, whisk together the remaining 3/4 cup/150 grams granulated sugar, the egg yolks, the cornstarch, the salt and the vanilla, if using, until the mixture is lump-free and pale in color. Ladle a bit of the hot cream mixture into the egg yolks and whisk until completely blended, adding a bit more at a time until half the cream mixture is added. Transfer the yolk-cream mixture back into the pot with the remaining cream mixture.
  • Return the pot to medium heat and, whisking constantly, cook until the mixture has gone from thin and watery to thick and custardy, with the occasional bubble popping up, 3 to 5 minutes.
  • Immediately pour the mixture over the chocolate, and let sit for a minute or two, giving the bowl a shake to help the chocolate settle as it melts. Using a whisk, mix the chocolate into the cream as it melts, until you have an ultrasmooth, silky pudding. Transfer to a flat baking dish (an 8-by-8-inch pan works well) and cover the top of the pudding with plastic wrap. Refrigerate until pudding is completely set, at least 3 hours and up to 48 hours.
  • Assemble and serve: Using either an electric mixer on medium or a whisk and elbow grease, whisk heavy cream and confectioners' sugar in a medium bowl until light and fluffy. (The cream should hold a gentle peak.) Whisk in sour cream.
  • To serve, spoon a bit of chocolate pudding into a serving vessel. This can be done in individual bowls, glasses, cups or coupes, or alternatively, one large bowl or baking dish - the choice is yours. Then spoon in an equal amount of whipped sour cream, and scatter with crumbled cookies. Repeat until the vessel is full, topping with flaky salt.
  • Eat immediately, so the cookies stay crunchy, or store in the refrigerator for up to 3 days.

2 1/4 cups half and half
1/3 cup brandy
3 cups (18 ounces) semisweet chocolate chips, divided
1/2 cup (packed) dark brown sugar
1 teaspoon ground cinnamon, divided
4 large eggs
1 teaspoon vanilla extract
Pinch of salt
8 slices crustless country white bread (each about 5x4 1/2 inches), cut into 1/2 inch cubes (about 6 cups)
2 cups chilled whipping cream
2 tablespoons sugar

Steps:

  • Brush 8x8x2 inch glass baking dish with 1 tablespoon melted butter. Simmer half and half and brandy in heavy large saucepan 3 minutes. Remove from heat. Add 1 cup chocolate chips. Let stand 1 minute, then whisk until chocolate is melted and mixture is smooth. Whisk in brown sugar and 1/2 teaspoon cinnamon. Let stand until cool, about 20 minutes. Whisk in eggs, then vanilla and salt. Stir in bread. Let stand 30 minutes. Spread half of pudding mixture (about 2 1/2 cups) in prepared dish. Sprinkle with 2 cups chocolate chips. Cover with remaining pudding mixture. (Can be made 1 day ahead. Cover; chill.) Preheat oven to 350 degrees F. Bake pudding uncovered until puffed and firm in center, about 45 minutes. Remove from oven; let cool 10 minutes. Beat chilled cream, sugar, and 1/2 teaspoon cinnamon in medium bowl until peaks form. Spoon pudding into bowls. Top with whipped cream.

2 Tbsp frozen whipped topping, thawed

  • 1. In medium sized mixing bowl, combine the pudding mix with the milk and Bailey's Irish Cream. Using a wire whisk, beat the pudding mix for 2 minutes. Stir in two tablespoons of whipped topping and beat until well incorporated. Pudding will be soft set in about 5 minutes. Garnish with additional whipped topping if desired.

Nonstick cooking spray
11 ounces dark chocolate, preferably 64 percent cacao
2 ounces milk chocolate
3/4 cup unsalted butter
8 large eggs, separated
1/2 cup light-brown sugar
1 tablespoon pure vanilla extract
Pinch of coarse salt
1/3 cup plus 3 tablespoons granulated sugar
2 tablespoons crushed peppermint candies, plus 8 whole for garnish
1 cup mascarpone cheese, softened
1 cup whipped cream
Confectioners' sugar, for dusting

Steps:

  • Preheat oven to 350 degrees. Line a 9-inch springform pan with a parchment paper round; spray with nonstick cooking spray. Wrap exterior of pan with a double layer of heavy-duty aluminum foil. Set aside.
  • Melt both chocolates and butter together in a heatproof bowl set over (but not touching) simmering water; set aside to cool slightly.
  • In the bowl of an electric mixer fitted with the whisk attachment, beat egg yolks, brown sugar, and granulated sugar until very thick and ribbons form; stir in vanilla, salt, and cooled chocolate.
  • In the clean bowl of an electric mixer fitted with the whisk attachment, beat egg whites until stiff peaks form. Gently fold in some of the egg yolk mixture, then fold half of the egg whites into the egg yolk mixture. Fold remaining egg whites into yolk mixture.
  • Pour into prepared springform pan and place it into a larger roasting pan. Add enough hot water to roasting pan to come 1 inch up sides of springform pan. Carefully transfer to oven and bake until top appears dry but inside is moist and mousse-like, 50 to 60 minutes. Transfer to a wire rack and let cool completely.
  • Meanwhile, line a baking sheet with a nonstick baking mat or waxed paper. Place whole peppermint candies about 2 inches apart on baking sheet. Transfer to oven and bake until melted, about 7 minutes. Remove from oven and let cool on baking sheet.
  • In a small bowl, mix together mascarpone cheese, crushed peppermint candies, and 1 tablespoon sugar. Stir in whipped cream and add remaining 2 tablespoons sugar.
  • To serve, unmold cake and dust with confectioners' sugar. Serve with peppermint mascarpone cream and candy garnish.

NOTE YOU CAN USE INSTANT PUDDING IF PREFERRED. DON'T FORGET TO USE 1/2 CUP LESS MILK PER BOX BEING USED. BEAT PER INSTUCTIONS AND SPREAD OVER CHEESE LAYER. LET PIE SET FOR SEVERAL HOURS OR OVER NIGHT.
8 oz softened cream cheese
1 Tbsp milk for cream cheese
2 Tbsp sugar
8 oz Cool Whip divided
2 pkg chocolate fudge pudding
3 c milk
nuts or garnish of choice
1 graham cracker crust

  • 1. Cook pudding mix with milk in sauce pan. See instructions for pie on box. Omit one cup milk from pie directions. Normally it is 2 cups milk per box. Use 1 1/2 c milk per box. Cook and stir to boiling. After it thickens. remove frim heat. Cool for 15 minutes.
  • 2. While it is cooling. Beat the cream cheese, sugar and tablespoon of milk together. Mix in 4 ounces (1/2) the Cool Whip. Combine well.
  • 3. Spread cheese mixture in bottom of crust. Top cheese layer with cooled pudding. Put in fridge uncovered for a few hours or overnight. Serve with remaining Cool Whip. Garnish with nuts, chocolate chips or shaved chocolate.

I made this for Christmas day lunch, experimenting with microwave recipes found in "Christmas Microwave Know-How". The recipes are designed for a 650/700 watt microwave, and mine is a little larger, so I adjusted cooking times accordingly, cooking for slightly shorter times than suggested. I was very pleased with how simple it was to turn out an attractive and delicious pudding! The original recipe called for 2 tsp of instant coffee powder, but my children don't care for coffee, so I subbed 2 tsp of cocoa powder instead, for a chocolate pudding. Next time, I will fold in some chopped chocolate, or chocolate chips, for a richer pudding. I might also substitute some of the milk for cream, maybe about 150 ml. A tblsp of rum might be nice too!

50 g soft brown sugar
6 teaspoons cornflour
3 teaspoons plain flour
2 teaspoons cocoa powder
500 ml milk
1 egg white
3 egg yolks
25 g butter (melted)

Steps:

  • Sift together the brown sugar, cornflour, plain flour and cocoa powder, and then whisk together with the milk in a large bowl.
  • Microwave at 100% (High) for 7 - 71/2 minutes, until thick, whisking every 2 minutes.
  • Lightly beat the egg yolks, and mix in 6 tbls of the hot custard. Blend thoroughly, then stir the yolk mixture into the remaining custard.
  • Microwave on High for another 1 - 2 minutes, or until thick. Beat in the butter, then cover with cling film and cool.
  • Whisk the egg white until stiff, and fold into the custard. Pour into individual glasses. You might like to top it with a swirl of whipped cream!

Tips:

  • To make the smoothest pudding, make sure to whisk the cornstarch and milk mixture until it's completely smooth before adding it to the hot milk. Any lumps will remain in the pudding.
  • If you don't have a double boiler, you can still make this pudding using a heavy-bottomed saucepan. Just be sure to stir the mixture constantly to prevent it from scorching.
  • For a richer pudding, use whole milk instead of skim milk.
  • If you want a thicker pudding, add more cornstarch. Just be sure to whisk it together with the milk until it's completely smooth before adding it to the hot milk.
  • If you want a sweeter pudding, add more sugar. Just be sure to taste it before serving to make sure it's not too sweet.
  • For a more chocolatey pudding, use unsweetened cocoa powder instead of Dutch-process cocoa powder. Dutch-process cocoa powder has a milder chocolate flavor.
  • To make chocolate cream pudding, simply add 1/2 cup of semisweet chocolate chips to the pudding after it has been cooked. Stir until the chocolate chips are melted and smooth.
  • Serve chocolate cream pudding warm or cold. It can be served on its own, or topped with whipped cream, berries, or nuts.
