1 cup white sugar
1 ½ teaspoons vanilla extract
8 ounces semisweet chocolate, chopped
24 Bing cherries with stems

Steps:

  • Pour the sugar into a shallow dish. Drop two drops of vanilla at a time into the dish in 24 separate places to form lumps of vanilla sugar. Set aside to allow the lumps to harden.
  • Pit the cherries carefully from the bottom. I use a small curved dental tool. Make sure the stem stays intact.
  • When the lumps of sugar have hardened, insert them into the cherries where the pits were; set aside. Melt chocolate in the microwave, stirring every 30 seconds until melted and smooth.
  • Hold cherries by the stem and dip into the chocolate leaving the very top uncovered. Set on waxed paper to dry. Refrigerate overnight to allow the sugar lumps to dissolve.

1 1/2 cups confectioners' sugar, plus more for dusting
1 tablespoon plus 1 teaspoon light corn syrup
1 tablespoon unsalted butter, room temperature, or vegetable shortening
32 Luxardo cherries (available at williamssonoma.com)
32 lengths (2 inches each) cloth-wrapped floral wire (optional)
1 cup Faux-Tempered or Tempered Chocolate

Steps:

  • In a bowl, stir together sugar, corn syrup, 1 tablespoon water, and butter until a dough forms. Transfer to a work surface lightly dusted with confectioners' sugar and knead until smooth, dusting dough with more sugar as necessary, until no longer sticky. Scoop 1 teaspoon of dough into your palm and flatten into a 1-inch round. Place a cherry in center of round and wrap dough around cherry, pressing with your fingers, if necessary, to enclose. Gently roll between your palms until smooth. Repeat process with remaining dough and cherries. Make a small loop in one end of each length of wire, then insert a looped end into center of each cherry (loop will prevent wire from slipping out when dipping). Transfer to a parchment-lined sheet. Let stand, uncovered, until hard and dry, at least 2 hours and up to 1 day.
  • Using wire stems to hold them, dip each cherry into chocolate, then lift and let excess chocolate drip back into bowl. Transfer to a parchment-lined sheet and let stand until chocolate is hard and dry, about 1 hour. Serve, or store in an airtight container at room temperature up to 1 month.

2 large eggs

3/4 cup dried tart cherries (about 3 1/2 ounces)
1/3 cup semisweet chocolate chips
1/4 cup cherry preserves

  • Make sauce:
  • Press preserves through fine strainer into heavy medium saucepan. Add cream and bring to simmer. Remove from heat. Add chocolate and whisk until melted and smooth. (Can be made 2 days ahead. Cover; chill. Rewarm before serving.)

  • Preheat oven to 350°F. Butter 11 x 7-inch metal baking pan. Stir chopped chocolate and butter in heavy small saucepan over low heat until melted and smooth; remove from heat. Whisk sugar, eggs and vanilla in medium bowl until blended; whisk in chocolate mixture. Sift in flour, baking powder and salt; stir to blend. 1 package (8 ounces) cream cheese, softened
2 tablespoons ground hazelnuts
2 tablespoons maple syrup
2 cups white baking chips
12 teaspoons shortening, divided
1-1/2 cups milk chocolate chips
1-1/2 cups semisweet chocolate chips

Steps:

  • Pit cherries through the sides, leaving stems intact. In a small bowl, beat cream cheese until smooth. Stir in hazelnuts and syrup. Pipe into cherries. , In a small microwave-safe bowl, melt white chips and 5 teaspoons shortening at 70% power. Microwave at additional 10- to 20-second intervals, stirring until smooth. In another bowl, repeat with milk chocolate chips and 3-1/2 teaspoons shortening. Repeat with semisweet chips and remaining shortening., Holding stems, dip a third of the stuffed cherries into melted white chocolate; allow excess to drip off. Place on waxed paper; let stand until set. Repeat with remaining cherries and milk chocolate and semisweet chocolate. Dip the white-coated cherries a second time to completely cover; let stand until set., Reheat remaining melted chocolate if necessary. Drizzle white chocolate over cherries dipped in milk or semisweet chocolate. Drizzle milk or semisweet chocolate over white chocolate-dipped cherries. Store in an airtight container in the refrigerator.

4 ounces heavy cream
