CHOCOLATE MARSHMALLOW BROWN SUGAR FUDGE

Categories     dessert

Time 3h20m

Yield 25 pieces

Number Of Ingredients 7

Vegetable oil, for greasing pan
5 tablespoons unsalted butter
1 1/2 cups packed light brown sugar
1/2 cup evaporated milk
5 cups mini marshmallows
10 ounces milk chocolate, grated
2 1/2 ounces dark chocolate, at least 60-percent cocoa solids, grated

Steps:

  • Grease an 8-by-8-by-2-inch pan. Line with parchment paper, making sure it overlaps the sides so it is easy to take out the fudge once it has set.
  • Add the butter, brown sugar, milk and marshmallows to a medium pan over low heat to melt gently. Once the sugar has dissolved, turn up the heat and bring to a boil. Boil for 5 to 6 minutes. Take the pan off the heat and add the chocolate. Let it sit for 1 minute, then stir the mixture together until the chocolate has melted. Pour into the prepared pan and let cool for 2 to 3 hours.
  • When it is set, remove the fudge from the pan, cut into 25 squares and serve.

Tips:

  • To achieve a smooth and creamy fudge, use high-quality chocolate and marshmallow fluff. Cheaper alternatives may result in a grainy or gritty texture.
  • Use a heavy-bottomed saucepan to prevent the fudge from scorching. A thick bottom will distribute heat evenly and reduce the risk of burning.
  • Stir the fudge constantly while it is cooking. This will help prevent the sugar from crystallizing and ensure a smooth texture.
  • Be patient when cooking the fudge. It takes time for the sugar to dissolve and the mixture to thicken. Rushing the process will result in a grainy or chewy fudge.
  • Use a candy thermometer to accurately measure the temperature of the fudge. This is the best way to ensure that it reaches the correct consistency.
  • If you don't have a candy thermometer, you can use the cold water test. Drop a small amount of fudge into a bowl of cold water. If it forms a soft ball, the fudge is ready. If it forms a hard ball, the fudge is overcooked.
  • Once the fudge has reached the desired consistency, remove it from the heat and let it cool slightly. Then, beat it with a wooden spoon until it becomes thick and creamy.
  • Pour the fudge into a prepared pan and let it cool completely before cutting it into squares.

Conclusion:

Chocolate marshmallow fudge is a delicious and easy-to-make treat that is perfect for any occasion. With its rich chocolate flavor and gooey marshmallow center, it is sure to be a hit with everyone. So next time you are looking for a sweet treat, give this recipe a try.
