Tips:
- Use high-quality chocolate for the best flavor. A dark chocolate with a cocoa content of at least 70% is ideal.
- Make sure the butter and eggs are at room temperature before you start baking. This will help the ingredients to combine more easily and create a smoother batter.
- Do not overmix the batter. Overmixing can make the cookies tough.
- Chill the dough for at least 30 minutes before baking. This will help the cookies to hold their shape and prevent them from spreading too much.
- Bake the cookies until they are just set. Overbaking will make the cookies dry and crumbly.
- Let the cookies cool completely before filling them. This will help to prevent the filling from melting.
- For a richer flavor, use homemade raspberry jam or preserves for the filling.
- These cookies can be stored in an airtight container at room temperature for up to 3 days.
