Provided by OralW

Number Of Ingredients 8

1/2 cup peanut butter
3 tablespoons soft butter
1 teaspoon vanilla
1 cup Rice Krispies
1/2 cup pecans, chopped fine
1 cup coconut, shredded (I used unsweetened)
1 package semi-sweet chocolate chips
1 square sweet chocolate

Steps:

  • Mix everything together, refrigerate for a half hour or longer and then form into balls. Return to fridge and let chill at least an hour (longer would be best). Note: To make it easier to roll in chocolate, freeze for a minimum of 4 hours or overnight. Melt the following together in a double -boiler: one package chocolate chips, one square sweet chocolate. Keep on low so that chocolate remains soft. Drop balls into chocolate mixture one at a time using a fork to roll them so that the chocolate will cover. Let set on parchment paper in fridge. They freeze well. Note: The balls can also refrigerated over night or may be frozen, and then dipped in chocolate.

Tips:

  • Use fresh marshmallows for the best results. Stale marshmallows will not melt properly and will make your Rice Krispie balls tough.
  • Do not overcook the marshmallows. Overcooked marshmallows will make your Rice Krispie balls hard and chewy.
  • Add the Rice Krispies to the marshmallow mixture gradually. This will help prevent the Rice Krispies from clumping together.
  • Use a large bowl to mix the Rice Krispie balls. This will give you plenty of room to work and prevent the Rice Krispies from spilling over the sides of the bowl.
  • Grease your hands with butter or cooking spray before rolling the Rice Krispie balls. This will help prevent the Rice Krispies from sticking to your hands.
  • If you are making Rice Krispie balls for a party, you can save time by making them ahead of time and freezing them. Simply place the Rice Krispie balls in a single layer on a baking sheet and freeze them for up to 2 months. When you are ready to serve, thaw the Rice Krispie balls at room temperature for about 30 minutes.

Conclusion:

Rice Krispie balls are a classic treat that can be enjoyed by people of all ages. They are easy to make and can be customized with a variety of different toppings. With a little creativity, you can create Rice Krispie balls that are perfect for any occasion.
