2 cups flour
2 cups sugar
1 cup water
3 1/2 tablespoons cocoa
1/4 teaspoon salt
1/2 teaspoon baking soda
1 cup butter
1/2 cup buttermilk
1 teaspoon vanilla
2 eggs
1/2 cup butter
3 1/2 tablespoons cocoa
3 tablespoons milk
2 cups powdered sugar
1 teaspoon vanilla

Steps:

  • For cake: Mix flour and sugar together in a large mixing bowl.
  • In saucepan mix water, cocoa, salt, and butter.
  • Bring to a boil.
  • Pour over flour and sugar.
  • Add buttermilk, eggs, soda, and vanilla.
  • Mix until blended.
  • Pour into large greased cookie sheet.
  • Bake in 375° oven for 20 minutes.
  • For icing: While cake is cooking bring butter, cocoa, and milk to a boil in a small saucepan.
  • Remove from heat; add sugar& vanilla.
  • Spread on HOT out of the oven cake.

THE FOLLOWING RECIPE IS FOR A REGULAR SMALL CAKE..I DOUBLE MINE FOR BIGGER PARTIES (CAKE IN PHOTO ABOVE IS DOUBLED, LARGER PAN THAN JUST A 9X13")
2 c flour
2 c sugar
1 c shortening (crisco lard, plain or butter flavored)
1 c water
1 stick butter
4 Tbsp cocoa powder
1/2 c buttermilk
1 tsp of a good vanilla
1 tsp baking soda (stir into flour)
3 medium eggs
1 Tbsp cinnamon if you like (optional)
LAURA'S 7 MINUTE FROSTING: (CAN ALSO BE DOUBLED FOR LARGER CAKE)
1 stick butter
1 Tbsp of a good vanilla
6 or 7 Tbsp milk
4 Tbsp cocoa powder
1 lb powered sugar (16oz)
1/2 c coconut flakes
1 c chopped pecans

Steps:

  • 1. Preheat oven to 350°F
  • 2. Bring the 1 cup shortening, 1 stick butter, 1 cup water and 4 T cocoa to boil in a large saucepan..stir frequently.
  • 3. Pour over the flour (stir baking soda into flour) , cinnamon (if using) & sugar... stir in the buttermilk, beat the eggs with the vanilla and add to flour mixture.
  • 4. Stir well... pour into greased and floured 9X13" cake pan (or jellyroll pan for a sheetcake if doubling recipe)...bake in preheated 350°F oven for 30 minutes or until done.
  • 5. While the cake is still warm... start making the Yummy frosting.
  • 6. "Laura's 7 minute frosting": (Peggy said: I still have know idea why she calls it 7 minute frosting???)
  • 7. Heat butter, cocoa & milk... add the powered sugar and vanilla... stir well... then add the coconut flakes & pecans.
  • 8. Stir together well...then pour over the cake while it is still warm.
  • 9. Don't even think of trying to figure out all the calories! hehehe it's just Yummy, everyone goes bonkers over this cake......Peggy (written as given to me by my Aunt Laura; my Mom's sister)

This is Moms recipe. I have eaten this since I was a child. I love it especially with a great big ol glass of ice cold milk!

2 c sugar
2 stick butter
2 c flour
4 Tbsp cocoa powder
1C c water
1/2 c buttermilk
2 eggs - slightly beaten
1 tsp baking soda
1 tsp cinnamon
1 tsp vanilla
icing:
1 stick butter
4 Tbsp cocoa powder
4 Tbsp buttermilk
1 box powdered sugar
1 tsp vanilla
1 c chopped pecans

Steps:

  • 1. Sift sugar and flour together. In a sauce pan, mix the butter, cocoa and water bringing to a rapid boil. Pour over flour and sugar mixture and stir until well mixed. Add buttermilk, eggs, baking soda cinnamon and vanilla. Mix well and pour into a greased pan that's at least 1/4" and bake at 400* in preheated oven for 20 minutes.
  • 2. Begin making about 5 minutes before the cake is done.
  • 3. Melt butter, cocoa and buttermilk together and bring to a rapid boil. Remove from heat and add 1 box of powdered sugar, vanilla and pecans. Beat well with spoon and spread on the cake while it's hot.
