- 1. Preheat oven to 350 and grease a 9x9x2 baking pan. Mix cocoa powder and the 3 T of sugar together in a bowl, set aside.
- 2. In a large bowl, cream together sugar and butter until fluffy. Add eggs one at a time, beating after each addition.
- 3. In another bowl, combine flour and baking powder. In one more bowl, combine milk and vanilla extract. Alternate between adding about 1/3 of the flour mixture and 1/3 of the milk to the butter/sugar mixture until everything is completely combined.
- 4. Pour about one third of the batter into the prepared pan. Sprinkle about half of the cocoa/sugar mixture on top. Pour another third of the batter in the pan, top with the rest of the cocoa mixture, finish by layering in the final third of the batter.
- 5. Bake for 25-30 minutes or until the cake tests done with a toothpick.

From an old Betty Crocker cookbook. I changed it just a bit. I chopped the nuts finer so they do not burn on the tips and it needs to cook a bit longer than the recipe states. You cut in the chocolate to get a swirling effect. Yummy.

- 1. Preheat oven to 400 Degrees. Grease a square baking pan.
- 2. For the cake, mix together the baking mix, 1/4 cup sugar, 2 tbs melted butter, egg and milk. Spread in pan.
- 3. Melt the chocolate and spoon it over the batter. Use a knife to cut through the batter several times to create the swirl effect.
- 4. For the topping mix the nuts, coconut, 1/4 cup sugar and 1 tbs melted butter. Sprinkle over the top of cake.
- 5. Bake at 400 degrees for 20 minutes. This is the instruction on the original recipe but I find this doesn't usually work well. It usually is not done at this point and I turn it down to 350 and bake another 10 to 15 minutes until it's done. Turning it down helps to keep the topping from getting too brown.
Tips:
- For a richer flavor, use dark chocolate or bittersweet chocolate chips.
- If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.
- To make sure the cake is cooked through, insert a toothpick into the center. If it comes out clean, the cake is done.
- Let the cake cool completely before frosting it. This will help the frosting set properly.
- For a more elegant presentation, dust the top of the cake with powdered sugar or cocoa powder.
