1/4 cup soy sauce
2 tablespoons mirin
1 tablespoon rice vinegar
1 tablespoon minced or grated fresh ginger
1/2 teaspoon sugar
1 tablespoon sesame oil
1 pound firm tofu
1 romaine heart, chopped
5 cups mixed chopped or diced vegetables, such as green or red cabbage, celery (from the inner heart), red bell pepper and radishes (sliced or chopped)
1/4 cup dry roasted peanuts, coarsely chopped
1/4 cup chopped cilantro (more to taste)
1 serrano pepper, seeded and minced (optional)
2 tablespoons fresh lime juice
1/4 cup tofu marinade, above
2 tablespoons canola or peanut oil
1/3 cup low-fat buttermilk or plain nonfat yogurt

Steps:

  • Marinate the tofu: combine the soy sauce, mirin, rice vinegar, ginger and sugar in a 2-quart bowl. Whisk in the sesame oil and combine well. Drain the tofu and pat dry with paper towels. Tips:

  • Choose firm or extra firm tofu: This type of tofu holds its shape better when cooking.
  • Press the tofu to remove excess moisture: This will help the tofu absorb the marinade better and crisp up in the oven.
  • Use a flavorful marinade: The marinade is what will give the tofu its flavor, so make sure to use a combination of spices and herbs that you enjoy. Some good options include soy sauce, olive oil, garlic, ginger, and sesame seeds.
  • Bake the tofu at a high temperature: This will help the tofu get crispy on the outside and tender on the inside.
  • Chop the tofu into small strips: This will make it easier to eat and will help it absorb the dressing better.
  • Use a variety of vegetables in your salad: This will add color, texture, and flavor to the dish. Some good options include romaine lettuce, kale, carrots, cucumbers, tomatoes, and red onion.
  • Make a simple dressing: A simple vinaigrette dressing is all you need to dress the salad. Just whisk together some olive oil, vinegar, salt, and pepper.
