CHICKEN CHOW MEIN CASSEROLE

Chicken Chow Mein Casserole image

This simple casserole version of chicken chow mein makes great use of leftover chicken or turkey and is easy on the budget and your time. I don't measure or weigh the amount of chicken I use but the original recipe calls for 3 pounds so I've left the recipe that way. I just use whatever I have left over, or I'll stew a few chicken breasts or pieces if I'm starting from scratch. If you've got 2-3 cups of chicken you'll be in good shape. For a little extra kick add some red pepper flakes. You can easily cut this recipe in half for a smaller family.

Categories     Casseroles

Number Of Ingredients 12

1 lb hamburger
3/4 c chopped celery
3/4 c chopped onion
1 1/4 c boiling water
1/2 c rice, uncooked
1/2 tsp salt
1 can(s) chicken and rice soup
4 oz mushrooms
1 Tbsp brown sugar
2 tsp soy sauce
1 tsp butter
1 1/2 c chow mein noodles

Steps:

  • 1. Cook and stir hamburger, celery and onion until hamburger is light brown, then drain.
  • 2. Pour water on rice and add salt in greased 2 quart casserole.
  • 3. Stir in hamburger, soup, mushrooms, sugar, soy sauce and butter.
  • 4. Cover and cook in 350 oven for 30 minutes; stir.
  • 5. Cook uncovered for 30 minutes longer.
  • 6. Stir in noodles, serve immediately.

Tips:

  • Use fresh vegetables: Fresh vegetables will give your chow mein casserole the best flavor and texture. If you don't have fresh vegetables on hand, you can use frozen vegetables, but be sure to thaw them before adding them to the casserole.
  • Cook the noodles al dente: Al dente means "to the tooth" in Italian, and it refers to the ideal texture for cooked pasta. Noodles that are cooked al dente are slightly firm to the bite. If you overcook the noodles, they will become mushy and ruin the texture of your casserole.
  • Use a variety of sauces: Chow mein sauce is typically made with soy sauce, oyster sauce, and sesame oil. However, you can also use other sauces, such as hoisin sauce, teriyaki sauce, or even sweet and sour sauce. Experiment with different sauces to find the flavor combination that you like best.
  • Add your favorite protein: Chow mein casserole is a great way to use up leftover chicken, beef, pork, or tofu. You can also add shrimp, scallops, or other seafood. If you're using raw meat or seafood, be sure to cook it thoroughly before adding it to the casserole.
  • Top with your favorite toppings: Chow mein casserole is a versatile dish that can be topped with a variety of ingredients. Some popular toppings include green onions, chopped peanuts, sesame seeds, and crispy wonton strips.

Conclusion:

Chow mein casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It's also a great way to use up leftover chicken, beef, pork, or tofu. With so many different variations, there's a chow mein casserole recipe out there for everyone. So next time you're looking for a quick and easy meal, give chow mein casserole a try.
