1 cup all-purpose flour
1 cup rolled oats
1 cup packed brown sugar
1 teaspoon baking soda
¼ teaspoon salt
½ cup butter
2 eggs
1 cup packed brown sugar
½ teaspoon almond extract
1 tablespoon all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 cup flaked coconut
1 cup maraschino cherries, drained and juice reserved
½ cup chopped pecans
6 tablespoons butter, softened
4 cups confectioners' sugar
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together 1 cup flour, oats, 1 cup brown sugar, baking soda and 1/4 teaspoon salt. Rub in the 1/2 cup of butter until crumbly. Press into the bottom of a 9x13 inch baking pan.
  • Bake for 10 minutes in the preheated oven. Remove and cool. Make the filling while the crust is baking. In a medium bowl, beat eggs, almond extract, 1 cup of brown sugar, 1 tablespoon of flour, baking powder and 1/2 teaspoon of salt until smooth. Stir in the coconut, cherries and pecans. Spread over the pre-baked crust.
  • Bake for 25 minutes in the preheated oven, until light brown. Let cool before icing.
  • To make the icing, mix together the remaining 6 tablespoons butter, confectioners' sugar and vanilla until smooth. Gradually add the reserved cherry juice until the desired consistency is reached. Drizzle over cooled bars before cutting into squares.

• For Crust:
• 1 cup all purpose flour
• 1 cup rolled oats
• 1 cup brown sugar, lightly packed
• 1 teaspoon baking soda
• 1/4 teaspoon salt
• 1/2 cup butter
For Filling:
• 2 eggs
• 1 cup brown sugar
• 1/2 teaspoon almond extract
• 2 tablespoons flour
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 1 cup coconut
• 1 cup well drained maraschino cherries, quartered (reserve juice)
• 1/2 cup chopped pecans
For Frosting:
• 1 1 /2 tablespoons soft butter
• 1 cup confectioners sugar
• 4 to 5 tablespoons cherry juice
• 1/8 teaspoon almond extract

Steps:

  • Mix flour, oats, brown sugar, baking soda and salt in a large bowl. Cut in butter until mixture is crumbly. Press into greased 9 by 13 pan and bake at 350 degrees for 10 minutes.
  • In a large bowl beat eggs, stir in brown sugar and almond extract
  • Mix flour, baking powder and 1/2 tsp salt, and stir into eg mixture until combined.
  • Fold in coconut and cherries.
  • Spread mixture over prepared crust using an offset spatula
  • Sprinkle with pecans
  • Bake at 350 degrees for 25 minutes, until lightly browned
  • Remove from oven and allow to cool while preparing frosting.

1 cup rolled oats
1 cup flour
1 cup brown sugar
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup cold butter
1 cup brown sugar
2 eggs
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon almond extract
1 cup coconut
1/2 cup green and red maraschino cherry, halved
1 cup pecan halves

Steps:

  • Set oven to 350 degrees.

2 sticks salted butter, softened
1/2 cup sugar
1 teaspoon vanilla extract
2 egg yolks, stirred
Zest and juice of 1 lemon
Zest of 1 orange
2 cups all-purpose flour, sifted twice
Green and red candied cherries, for topping

Steps:

  • In the bowl of a stand mixer with the paddle attachment, cream the butter and sugar until fluffy. Add the vanilla, egg yolks, lemon zest and juice and orange zest and mix until combined. Use a rubber spatula to scrape the bowl, then mix again. Add the sifted flour and mix until combined. Transfer the dough to a resealable plastic bag and refrigerate until firm, at least 1 hour.
  • When ready to make the cookies, preheat the oven to 300 degrees F. Line 2 baking sheets with parchment paper or silicone baking mats. Cut about 18 candied cherries in half.
  • Roll the dough into small balls and set on the prepared baking sheets. Gently press 1 cherry half cut-side down into each ball. Bake about 20 minutes, removing the cookies from the oven before they brown. Cool on a wire rack.

My family love these sweet, quick and easy to make cookies. These are one of our favorite Christmas cookies...we hope that you will enjoy them. You will find they don't last long. These little babies are UNBAKED. You make the batter and shape the cookies, placing them in a covered box in your refrigerator until needed. This recipe can very easily be halved, and they also vary well. We sometimes substitute the maraschino cheeries with drained pineapple chunks.

1 cup butter, unsalted, soft
3 1/2 cups icing sugar, sifted
2 tablespoons juice, orange, fresh squeezed
2 1/2 cups coconut, dessicated

1 -1 1/2 cup graham cracker crumbs

Steps:

  • In a large bowl mix the butter and sugar and juice together.
  • Next add the coconut and almonds to batter, making sure to blend well.
