4 cups fresh cranberries
1 ½ cups water
5 whole cloves
5 whole allspice berries
3 cinnamon sticks
2 cups white sugar

Steps:

  • Place fresh cranberries and water in a medium saucepan over medium heat.
  • Wrap cloves, allspice berries and cinnamon sticks in a spice bag. Place in the water with cranberries.
  • Cook until cranberries begin to burst, about 10 minutes.
  • Stir in sugar and reduce heat to low. Continue cooking 5 minutes, or until sugar has dissolved. Remove from heat and allow to cool. Discard spice bag. Chill in the refrigerator 8 hours, or overnight, before serving.

1 quart unfiltered apple cider or juice
2/3 cup red hots candy
1 package (1-3/4 ounces) powdered fruit pectin
5 cups sugar

Steps:

  • In a Dutch oven, combine cider and red hots. Stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir 1 minute. , Remove from heat; skim off foam. Ladle hot mixture into six hot half-pint jars, leaving 1/4-in. headspace. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. 2 packages (12 ounces each) fresh or frozen cranberries, thawed
1-1/2 cups sugar
1 cup orange juice
1/4 cup bourbon
3 teaspoons vanilla extract
1 teaspoon grated orange zest

  • In a large saucepan, combine cranberries, sugar, orange juice and bourbon. Bring to a boil. 2 ½ quarts strawberries, coarsely chopped
1 (12 ounce) package fresh or frozen cranberries, coarsely chopped
2 (2 ounce) packages powdered fruit pectin
1 teaspoon margarine
5 pounds white sugar

  • Sterilize jars and lids in boiling water for at least 10 minutes. Let simmer while making jam.

1 teaspoon vegetable oil, or as needed
1 cup white sugar
1 (16 ounce) can jellied cranberry sauce
3 (3 ounce) packages raspberry-flavored Jell-O® mix
½ cup chopped walnuts
1 cup white sugar for rolling

Steps:

  • Line an 8x8-inch pan with waxed paper; coat the paper with vegetable oil.
  • Combine 1 cup sugar, jellied cranberry sauce, and raspberry Jell-O® mix in a saucepan over medium heat, stirring until sugar and gelatin have dissolved. Bring to a boil, reduce heat to low, and simmer 20 minutes, stirring often. Mix walnuts into candy.

5 cups white sugar
1 ½ cups apple cider vinegar

7 cups sugar

Steps:

  • Strain cider, a coffee filter and sieve work well.
  • In a large pan heat cider till warm using medium heat.
  • Add sugar and heat, stir constantly until sugar is dissolved.
  • Turn up to medium high heat,bring to a full rolling boil, stir constantly.

  • Bring back to a full rolling boil,stir constantly for one minute.
