CHRISTMAS EVE PORK PIE

Christmas Eve Pork Pie image

Here in the Upper Peninsula of Michigan, it is a tradition for the Catholics to eat pork pie on Christmas Eve, after coming back from Christmas Eve mass. This is a cousin of the French-Canadian Tourtiere. I'm not Catholic, but I love these rich meat filled pies!

Tips:

  • Prepare the pork filling in advance: You can make the pork filling up to 2 days ahead of time. This will give the flavors time to meld and develop.
  • Use a good quality pork: The quality of the pork you use will make a big difference in the final product. Look for pork that is fresh, lean, and has a good amount of marbling.
  • Season the pork filling well: Don't be afraid to season the pork filling generously. The flavors should be bold and assertive.
  • Use a variety of herbs and spices: The combination of herbs and spices you use will determine the flavor of the pork pie. Be creative and experiment with different combinations.
  • Don't overwork the pastry: Overworking the pastry will make it tough. Be gentle when you are rolling it out and avoid handling it too much.
  • Chill the pastry before baking: Chilling the pastry before baking will help it to hold its shape and prevent it from shrinking.
  • Egg wash the pastry before baking: Egg washing the pastry will give it a golden brown color and make it shiny.
  • Bake the pork pie until it is golden brown and the filling is cooked through: The baking time will vary depending on the size of the pie. Check the pie regularly to make sure it is not overcooking.
  • Let the pork pie cool completely before serving: Letting the pork pie cool completely will allow the flavors to meld and develop. It will also make it easier to slice.

Conclusion:

Pork pie is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is also a great make-ahead meal that can be easily reheated. With a little planning and effort, you can easily make a pork pie that will impress your family and friends.
