PASTA WITH VODKA SAUCE AND SAUSAGE
Steps:
- Bring a medium saucepan of salted water to a boil. Add the pasta and cook until just al dente, 5 to 6 minutes. Drain in a colander and return to the saucepan.
- Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the sausage and cook, stirring, until browned and all pink has disappeared, 3 to 4 minutes. Add the onions, salt, and red pepper flakes and cook, stirring, until the onions are soft and golden, about 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the tomatoes and cook, stirring, until thick, about 2 minutes. Add the vodka and cook until the sauce reduced by half, 3 to 4 minutes. Stir in the cream and cook until the sauce thickens, about 2 minutes. Stir in the basil and remove from the heat.
- Toss the sauce with the pasta to coat evenly and transfer to a pasta bowl for serving. Top with cheese and sprig of basil and serve immediately.
BLUSHING PENNE PASTA
I reworked this recipe from an original that called for vodka and heavy whipping cream. My friends and family had a hard time believing a sauce this rich, flavorful and creamy could be light. -Margaret Wilson, Hemet, California

PENNE WITH SPICY VODKA TOMATO CREAM SAUCE
A nice change from your typical tomato sauce! If you're worried about the alcohol, don't be! It cooks off and cannot be tasted. It simply helps to enhance the flavors.

PENNE & SAUSAGES A LA VODKA
This recipe is an original creation specifically for the cooking contest. I used the mild Italian sausages but you could increase the heat by using the spicy type & adding more cumin. I served it with Caesar salad & Garlic bread. My DH just loved the sauce & wants me to make this dish again!!

CHRISTY'S PENNE/ITALIAN SAUSAGE IN VODKA BLUSH
I created this recipe for my daughter. She loves Blush sauce as opposed to a straight marinara or straight cream sauce. I serve this with a salad and ciabatta rolls. Enjoy!

Steps:
- Boil pasta according to package directions and drain.
- Combine all sauce ingredients and simmer on medium heat - stirring often so cream cheese melts completely.
- Slice smoked sausage into thick "quarterlike" slices and sautee in butter/garlic on medium heat until they start to brown slightly.
- Combime pasta/blush sauce/smoked sausage together - stirring thoroughly -- the pasta will fill with the sauce.
- After plating, sprinkle with mozzarella and parmesan cheese.
Tips:
- Use high-quality ingredients for the best flavor. Look for fresh vegetables, flavorful Italian sausage, and a good quality vodka.
- Don't be afraid to experiment with different types of pasta. Penne is a classic choice, but you could also use rigatoni, farfalle, or spaghetti.
- Don't overcrowd the pan when cooking the sausage. This will cause it to steam instead of brown.
- Let the sauce simmer for at least 15 minutes to allow the flavors to meld.
- Serve the pasta immediately, topped with freshly grated Parmesan cheese and chopped parsley.
Conclusion:
This easy and delicious penne with Italian sausage in vodka blush sauce is a surefire hit with the whole family. It's perfect for a quick weeknight meal or a special occasion dinner. With its creamy tomato sauce, tender sausage, and al dente pasta, this dish is sure to please even the most discerning palate. So next time you're looking for a satisfying and flavorful pasta dish, give this recipe a try.
