To the best of my knowledge, this recipe came from the early days in Colorado...or from the cattle trails leading into Colorado. It is a cowboy recipe and the ingredients can be varied, depending on what's available. In the old days, you couldn't always find what you needed...and sometimes it's fun to vary the ingredients. -Ed Jones, Baker City, Oregon

CHUCK WAGON SANDWICH

These are great! They are kind of like a pork tenderloin sandwich, but made with a beef patty instead of pork. You can use precooked breaded beef patties or precooked breaded chicken-fried steak patties in this as well. Look for them in the freezer section (heat and eat).

Tips:

  • To ensure the best flavor, use high-quality ground beef. Look for beef that is fresh and has a good amount of marbling.
  • Don't overmix the beef. Overmixing can make the patties tough.
  • Season the patties liberally with salt and pepper. You can also add other seasonings, such as garlic powder, onion powder, or chili powder.
  • Form the patties into equal-sized balls. This will help them cook evenly.
  • Cook the patties over medium heat. This will prevent them from burning on the outside and staying raw on the inside.
  • Don't flip the patties too often. Flipping them too often can make them dry.
  • Use a meat thermometer to ensure that the patties are cooked to your desired doneness.
  • Let the patties rest for a few minutes before serving. This will help them retain their juices.
