Time 35m

Yield 8 serving(s)

Number Of Ingredients 5

3 cups apple cider
1/2 teaspoon cinnamon
2 tablespoons butter
2 tablespoons honey
1 1/4 lbs carrots, peeled and julienned

Steps:

  • In large pot bring cider, cinnamon, butter and honey to a boil.
  • Stir in carrots and cook for 15 minutes, stirring occasionally.
  • Cook 5 more minutes stirring frequently until mixure has formed a thick glaze.

Tips:

  • Choose the right carrots: For the best flavor and texture, select fresh, young carrots that are about 2 inches long and have smooth, evenly colored skin. Avoid carrots that are thick or have blemishes.
  • Peel the carrots thinly: Use a vegetable peeler to remove just the thin outer layer of the carrots. This will help them cook evenly and absorb the glaze better.
  • Cut the carrots into uniform pieces: Cut the carrots into pieces of about the same size so that they cook evenly. If you are using baby carrots, you can leave them whole.
  • Use a good quality cider: The cider you use will have a big impact on the flavor of the glaze. Choose a cider that is fresh and has a good balance of sweetness and acidity.
  • Add some spices: To enhance the flavor of the glaze, add some spices such as cinnamon, nutmeg, or ginger. You can also add a pinch of salt and pepper.
  • Don't overcook the carrots: Cook the carrots until they are tender but still have a bit of a bite to them. Overcooked carrots will be mushy and bland.

With just a few simple ingredients and a little bit of time, you can make this classic dish that is sure to please everyone at the table.
