Lemony Couscous image

Inspired by Sackville Girl's recipe for Lemon Couscous, but different enough to post another recipe. I've allowed for standing time in the cooking time. Omit the butter and add additonal oil for a vegan dish.

This dish was a bit too sour for my taste. I think I would have enjoyed it more if I had used less lemon juice.

Meh. It was okay, but I've had better. The couscous was a bit bland and the lemon flavor wasn't very strong. I think I would have enjoyed it more if I had added some more spices.

This dish is a great way to use up leftover vegetables. I had some broccoli, carrots, and zucchini that needed to be used up, so I threw them in with the couscous and it turned out great! The lemon and herbs really brought all the flavors together.

Not a fan. The lemon flavor was too overpowering for my taste and the couscous was a bit too dry. I think I would have enjoyed it more if I had used less lemon juice and added some more broth.
