1/3 cup vegetable oil
1 1/2 tablespoons honey
1 1/2 tablespoons chili sauce (such as Heinz)

1/4 teaspoon ancho chile powder
1 pound medium shrimp, peeled and deveined
8 wooden skewers

8 oz (light or fat free) Italian dressing - about half a bottle
1 Tablespoon cumin
1 Tablespoon chili powder
3lbs frozen chicken breasts
Rice
2 cups uncooked brown rice
2 cups chopped cilantro
1 cup salsa verde (green salsa)
1 bunch green onions
4 cups of water
A pinch of salt

Steps:

  • Mix cumin, chili powder & dressing in bowl
  • Place frozen chicken breasts in crock pot
  • Pour mixture over chicken & cover
  • Cook on high for 5 hrs or on low for 7 to 8. Shred chicken in the crockpot and mix it well.
  • Wash and chop the cilantro. Mix the cilantro with 2 cups of water and pour in the pan for cooking the rice. Add two more cups of water, the salt, Salsa Verde, and onion. Bring to a boil. Stir in the rice in the boiling water. Cover and turn down heat to very low; steam for 30 minutes. Makes about 10 servings.
  • Put it all together with Toppings:
  • Cook whole wheat burrito tortillas on non-greased skillet 10-15 seconds on each side

3 cups chicken stock
1 (15-ounce can coconut milk
1/4 cup chopped cilantro leaves
1/3 cup roughly chopped cashews
1 cup frozen peas
1 teaspoon salt

Steps:

  • In a large stock pot, over medium-high heat, add the coconut and lightly toast. Remove to a small bowl and set aside. In the same pot, add the oil and the rice and saute until the rice is just starting to brown, about 6 to 8 minutes.
  • Add the chicken stock and the coconut milk and stir to combine. Reduce the heat to a low simmer, cover and cook for 15 minutes. Remove from heat and stir in the cilantro, cashews and peas. Season with salt and transfer to a serving bowl. Garnish with the toasted coconut and serve.

This a recipe my mom always makes. Its delicious! The rice turns out green because of the cilantro and it's full of flavor!

2 (4 ounce) skinless, boneless chicken breast halves
1 bunch fresh cilantro, stems removed
½ cup water
1 tablespoon vegetable oil
1 tablespoon minced garlic
¼ cup frozen, chopped carrots
¼ cup frozen peas
1 tablespoon cumin
salt and freshly ground black pepper to taste
1 cup uncooked white rice

Steps:

  • Place the chicken into a large saucepan and fill with enough water to cover, about 3 cups. Bring to a boil and cook for about fifteen minutes, or until chicken is done. Dice chicken, and reserve cooking liquid.
  • In a food processor or blender, puree cilantro with 1/2 cup water.
  • Heat oil in a saucepan and cook garlic until lightly browned. Pour in 2 cups of the cooking liquid and stir in the cilantro puree, diced chicken, carrots, peas, cumin and rice. Season with salt and pepper to taste. Bring to a simmer, then cover; cook on low heat until rice is tender and liquid has been absorbed, 15 to 20 minutes.

This rice has a mild coconut flavor. I served it with Macadamia Nut Chicken Breasts #30291 and a Thai red curry sauce. It was a perfect combination.

1 cup long grain rice or 1 cup jasmine rice
2 cups unsweetened coconut milk
1/2 cup finely shredded unsweetened coconut
1/2 inch peeled fresh ginger
3/4 teaspoon salt
chopped fresh cilantro (optional)

Steps:

  • Bring the coconut milk to a boil in a medium sized pot.
  • Add the rice, ginger and salt.
  • Stir and bring to a boil.
  • Reduce heat to low and then cover and simmer for 20 minutes.
  • While waiting, heat the shredded coconut in a skillet, toasting it lightly.
  • Remove from heat and set aside.
  • When the rice has cooked for 20 minutes, fluff it with a fork and throw out the ginger root.
  • Toss with toasted coconut.
  • Garnish with chopped cilantro just before serving.
