This is a great dish when you have all those extra summer vegetables on hand. Add some chicken if you like to make it a main dish, and serve over rice. The secret is to use all fresh vegetables.

3 medium potatoes, peeled and cubed
4 yellow squash, cubed
4 fresh tomatoes, peeled and chopped
1 medium onion, chopped
Salt and pepper to taste

Steps:

  • Place butter in a skillet over medium heat. Stir in potatoes, squash, tomatoes, and onion. Season with salt and pepper. Cook, stirring occasionally, until tender, about 30 minutes.

2 cups chicken broth
1/4 cup Lawry's Seasoned Salt
2 slices oscar meyer precooked bacon
1/2 teaspoon salt
1 table spoon mccormick italian seasoning

  • Directions:.
  • Break bacon into small pieces; combine all ingredients into medium sauce pan.
  • Bring to boil. Continue boiling over medium heat uncovered for ten minutes.
