APPLE CINNAMON BUNDT CAKE

Apple Cinnamon Bundt Cake image

This recipe is from Every Day Foods. I saw it on TV, and it looked so easy, I had to make it. It's moist and full of tender and chunky apple slices, and has a rich cinnamon spice flavor. I served it still warm with a scoop of vanilla ice cream. Wow! Be sure to serve within the first day or two, as the apples will break down.

Time 1h30m

Yield 12 serving(s)

Number Of Ingredients 11

2 1/2 cups flour
1 tablespoon ground cinnamon
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup unsalted butter, melted
1 1/2 cups packed brown sugar (it calls for light brown, but I used dark brown, and I really liked that)
4 large eggs
6 medium apples (keep from turning brown with a little lemon juice squeezed on the slices) or 4 large apples, peeled, cored and sliced 1/4 inch (keep from turning brown with a little lemon juice squeezed on the slices)
1 cup confectioners' sugar
2 -3 tablespoons water (I used apple juice, yum!)

Steps:

  • Preheat oven to 350, and prepare the 12 cup bundt pan (grease and flour if you don't have a non-stick).
  • In a medium bowl, whisk the flour, cinnamon, baking powder, salt, and baking soda together.
  • In a large bowl, melt the butter in the microwave, and add brown sugar and eggs, whisking until smooth.
  • Gradually whisk in dry ingredients just until combined- don't overmix.
  • Fold in the apples (it will look sort of like peanut butter coated apple slices, but don't worry- the batter bakes up around the apple slices) and spoon batter into the bundt pan, smoothing the top.
  • Bake until a tester inserted into the center of the cake comes out clean (about an hour).
  • Cool in the pan for about 15 minutes, and invert onto a rack placed over wax paper to cool completely.
  • Make the glaze by whisking the water (or apple juice) together with the confectioners' sugar adding just enough liquid to make the glaze thick but pourable.
  • Drizzle glaze over completely cooled cake, and let it firm up before serving.

Provided by Amanda Rettke

Categories     dessert

Time 2h

Yield One 8-inch cake

Number Of Ingredients 17

Nonstick baking spray
2/3 cup brown sugar
2 teaspoons ground cinnamon
1 cup (2 sticks) butter, at room temperature
1 1/2 cups granulated sugar
2 large eggs
3 teaspoons vanilla extract
3 cups all-purpose flour
3 1/2 teaspoons baking powder
1 cup milk, at room temperature
2 apples, peeled and finely chopped
1/4 cup (4 tablespoons) unsalted butter, at room temperature
1 cup confectioners' sugar
2 teaspoons ground cinnamon
1/4 teaspoon vanilla extract
1 to 2 tablespoons heavy whipping cream
Caramel, for drizzling (about 6 tablespoons)

Steps:

  • For the apple cinnamon cake: Preheat the oven to 350 degrees F. Spray two 8-inch round cake pans with baking spray or line with parchment.
  • Mix the brown sugar and cinnamon together in a bowl. Set aside.
  • Beat the butter and granulated sugar together in the bowl of a stand mixer fitted with the paddle attachment until smooth and creamy. Beat in the eggs, 1 at a time, until incorporated.
  • Add the vanilla extract and beat until incorporated, then remove the bowl from the mixer.
  • Sift the flour and baking powder together in a bowl, then stir into the creamed butter mixture by hand. Mix the milk into the batter until smooth.
  • You should have about 6 cups of batter. Pour 1 1/2 cups of the batter (or a quarter of your total batter) into one of the prepared cake pans; add a quarter of the apples and a quarter of the brown sugar mixture, lightly patting the apple mixture into the batter. Gently pour another 1 1/2 cups of the batter over the apple layer; top with another quarter of the apples and brown sugar mixture. Lightly pat the apples into the batter.
  • Repeat with the remaining cake pan, batter, apples and brown sugar mixture.
  • Bake until a toothpick inserted in the center of the cakes comes out clean, 30 to 40 minutes. Cool the cakes slightly, then invert them onto a rack to cool completely.
  • For the cinnamon buttercream: Add the butter, confectioners' sugar, cinnamon, vanilla and 1 tablespoon heavy cream to the bowl of a stand mixer fitted with the paddle attachment. Turn the mixer on slow to incorporate all the ingredients. If the frosting seems too thick, add the remaining tablespoon heavy cream. Turn the mixer on high and beat until the frosting is lighter and fluffier, 1 to 2 minutes. (You want the frosting to be a spreadable consistency.)
  • To assemble the cake: place the first layer of cake on a cake stand. Drizzle with up to 3 tablespoons of caramel. Spread the top of the layer with all of the frosting. Place the other cake layer on top and drizzle with up to 3 tablespoons of caramel. Serve immediately.
  • The cake keeps, covered in the refrigerator, for up to 3 days.

APPLE SPICE CINNAMON SWIRL COFFEE CAKE

Apple Spice Cinnamon Swirl Coffee Cake image

If you love cinnamon and apples, then this coffee cake is for you. It smells heavenly while baking. Starting with a spiced cake mix and apple muffin mix makes this easy to make and creates a yummy flavor combination. It's full of cinnamon and apples in every bite. This is a dense cake-like most coffee cakes, but very moist too....

Provided by Mary Gonzalez

Categories     Cakes

Time 1h5m

Number Of Ingredients 21

FOR CAKE:
1 box spice cake mix
1 pkg Marie Callander's apple muffin mix or any apple muffin mix (6 oz size)
3 eggs (I used Egg Beaters)
1/2 tsp salt
1 Tbsp cinnamon
1 c yogurt (I used the one with cream on the top)
1/3 c oil
1 Tbsp instant coffee
2 fresh chopped apples (peeled and cored)
1 c chopped nuts (I used pecan, cause it's all I had on hand)
1 c almond milk
FOR CINNAMON SWIRL
1/2 c melted butter
2 Tbsp sugar
1/2 c light brown sugar
1 1/2 Tbsp cinnamon
FOR ICING (OPTIONAL)
3 Tbsp powdered sugar
1/2 tsp vanilla extract
1-2 Tbsp almond milk

Steps:

  • 1. For Cake: Sift together all the dry ingredients several times - cake and muffin mix, instant coffee, cinnamon, and salt. Set aside.
  • 2. In stand mixer, using paddle, starting on slow speed blend dry ingredients with eggs (one at a time).
  • 3. Add yogurt, milk, oil. Blend on medium speed for 2-3 minutes.
  • 4. Add apples and nuts. Blend a few more minutes until all ingredients are incorporated scraping the sides often.
  • 5. CINNAMON SWIRL (best to do this after batter has been mixed as it only takes a minute). Melt butter. Add sugars and cinnamon. If mixture is too thick add a few teaspoons of milk until the consistency of gravy.
  • 6. Pour your batters in prepared pans. For this one I used 6 mini loaf pans, filling to about 3/4 full. Test Kitchen Note: We used a 9x13 pan.
  • 7. Dollop cinnamon swirl onto the batter 2 tablespoons at a time.
  • 8. With a knife, gently swirl the cinnamon through being careful not to touch the bottom. NOTE: I learned the hard way, it sticks to the bottom and cake is difficult to get out.
  • 9. BAKE @ 350 for how however many minutes, depending on size pan. For the mini loaf pans, it took 30-33 minutes. It also depends on your oven. Test Kitchen Note: It took 40 minutes for our 9x13 pan.
  • 10. If you want an icing, with a mix whisk 3 tbsp of powdered sugar, 1/2 tsp vanilla and 1-2 tbsp of almond milk.
  • 11. Drizzle or spread over cooled cakes.

APPLE-CINNAMON-WALNUT SKILLET CAKE

Apple-Cinnamon-Walnut Skillet Cake image

In addition to naturally sweet apples, other nourishing ingredients in this cake include Omega-3-rich walnuts, along with a duo of fiber-rich flours: whole-grain buckwheat and brown rice. Cinnamon takes the flavor up a notch, and with no eggs or dairy, this cake is perfect for anyone following a vegan diet. Even better? Apple-Cinnamon Glazed Angel Food Cake image

Great, light angel food cake with an apple-cinnamon glaze.

Provided by chof

Time 2h55m

Yield 12

Number Of Ingredients 12

1 ½ cups egg whites
1 ½ teaspoons cream of tartar
¼ teaspoon salt
1 cup white sugar
1 teaspoon vanilla extract
½ teaspoon almond extract
1 ½ cups confectioners' sugar
1 cup cake flour
⅓ cup unsalted butter
2 cups confectioners' sugar
½ teaspoon ground cinnamon
3 tablespoons apple cider, or more as needed

Steps:

  • Place a rack at the lowest position in the oven and preheat to 375 degrees F (190 degrees C).
  • Prepare cake: Beat egg whites, cream of tartar, and salt in a glass, metal, or ceramic mixing bowl until soft peaks form. Add sugar, 2 tablespoons at a time, beating well after each addition. Continue to beat until smooth and glossy and stiff peaks form. Mix in vanilla and almond extracts on low speed.
  • Combine confectioners' sugar and cake flour in a bowl; gently fold into the egg mixture. Pour into an ungreased, 10-inch fluted tube pan such as Bundt®.
  • Bake in the preheated oven until top crust is golden brown and the cracks feel dry, 35 to 40 minutes. Remove from the oven and immediately invert cake pan; let cool completely, about 2 hours.
  • Loosen the sides of the cake from the pan and remove onto a serving plate.
  • Prepare glaze: melt butter in a small saucepan. Stir in confectioners' sugar and cinnamon. Slowly add apple cider until glaze is thin enough to drizzle.

Tips:

  • Use a combination of apples. Using a mix of sweet and tart apples will give your cake a more complex flavor. Some good options include Granny Smith, Honeycrisp, and Braeburn.
  • Don't overmix the batter. Overmixing the batter will make the cake tough. Mix just until the ingredients are combined.
  • Let the cake cool completely before frosting it. This will help the frosting to set properly.
  • Use a cream cheese frosting. Cream cheese frosting is a classic pairing for apple cake. It's rich and tangy, and it complements the sweetness of the apples perfectly.
  • Garnish the cake with apple slices or cinnamon sticks. This will give your cake a festive look.

Conclusion:

Apple cake is a delicious and versatile dessert that can be enjoyed all year round. It's perfect for a special occasion or a simple weeknight treat. With so many different recipes to choose from, you're sure to find one that you'll love.
