1 ½ pounds ground beef
2 eggs, beaten
¾ cup dry bread crumbs
¼ cup ketchup
1 teaspoon Italian-style seasoning
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon garlic salt
1 (14.5 ounce) can diced tomatoes, drained
1 ½ cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix together ground beef, eggs, bread crumbs and ketchup. Season with Italian-style seasoning, oregano, basil, garlic salt, diced tomatoes and cheese. Press into a 9x5 inch loaf pan, and cover loosely with foil.
  • Bake in the preheated oven approximately 1 hour, or until internal temperature reaches 160 degrees F (70 degrees C).

1 can (14-1/2 oz.) Italian-style diced tomatoes, undrained
4 cloves garlic, minced
2 eggs, beaten
1 cup CLASSICO Tomato and Basil Pasta Sauce, divided
1-1/2 cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided

Steps:

  • Heat oven to 375°F.
  • Mix all ingredients except 1/4 cup each pasta sauce and cheese just until blended.
  • Shape into loaf in 13x9-inch shallow baking dish sprayed with cooking spray.

A twist on the old standard meatloaf. This is from someone who used to run an old BBS that had a cooking "echo". I use 1/2 ground beef, and 1/2 ground turkey. Use a commercial canned marinara or make your own.

1 lb ground beef
1/2 cup Italian seasoned breadcrumbs
1/2 cup milk
1 egg
1/4 teaspoon fennel seed
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
salt and pepper, to taste
1 small onion, minced
1 teaspoon garlic, minced
2 teaspoons olive oil
2 cups marinara sauce

Steps:

  • Pre-heat the oven to 350°F.
  • Put a cookie sheet in oven while preheating.
  • In a large bowl, mix together the beef, breadcrumbs, milk, egg and spices.
  • Heat the oil in a skillet. Add the onion and garlic. Cook until just soft.
  • Mix into the meat mixture.
  • Put into a loaf pan. Place loaf pan on preheated cookie sheet and bake for 1 hour or until firm in the middle.
  • Cool slightly and slice.

1 cup spicy tomato juice
3/4 cup uncooked oatmeal
1 egg
1/2 cup onion
1/2 teaspoon salt
1/4 black pepper
1/4 lb sliced deli ham
1/4 lb sliced swiss cheese

Steps:

  • Pre-heat oven to 350 degrees.
  • Mix together all ingredients listed under"main loaf".
  • Press out into a rectangle shape that is no wider than the loaf pan you will be using.
  • Do this on a piece of wax paper.
  • Lay ham slices and then swiss cheese on top of ground beef mixture.
  • Roll meat loaf like a jelly roll (the ham and cheese will look like a swirl in center of the loaf- thus the name"with a twist").

1 tablespoon olive oil, or as needed
1 cup chopped mushrooms
½ cup chopped red bell pepper
½ cup finely chopped onion
1 clove garlic, minced
½ cup Italian-seasoned bread crumbs with Romano cheese
3 sprigs Italian parsley, finely chopped
1 large egg
1 teaspoon Italian seasoning
11 ounces ground pork
18 ounces lean ground beef
¼ cup tomato sauce
1 teaspoon Dijon mustard (such as Maille®)
1 teaspoon dark brown sugar
1 teaspoon white vinegar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
  • Heat 1 tablespoon oil in a skillet over medium heat. Add mushrooms, bell pepper, and onion; cook and stir until just soft, 3 to 4 minutes. Add garlic and cook until fragrant, about 30 seconds. Set mixture aside and let cool.

3 - eggs
1/3 cup(s) sun dried tomato tapenade
1/3 cup(s) purple-onion chopped
1/3 cup(s) green bell pepper (chopped)
1/3 cup(s) celery (chopped, use leafy parts too)
1 tablespoon(s) minced garlic chopped (spice world)
1 1/2 tablespoon(s) ground ginger (spice world)
1 cup(s) bread crumbs (chopped real fine)

1/2 teaspoon(s) freshly ground black pepper

Steps:

  • Grease loaf pans with extra-virgin olive oil. Preheat oven to 350 dF.
  • Topping: Using the 1/4 can tomato paste you retained add 1/4 c ketchup and 1/8 c vidalia onion poppyseed dressing...mix together well, set aside.
  • Grab yourself a large mixing bowl (big enough to get your hands in), to mix ingredients up. Add aLL ingredients together, (except topping mix), and combine well.
  • Put into oiled loaf pans and spread your topping all over the top of each loaf. This mixture will make enough to fill 1-regular sized loaf pan plus 2-mini loaf pans (or 2-regular loaf pans).
  • Bake for approximately 1 to 1 1/2 hours (or when the internal temperature of the meatloaf reaches 160 dF)...I baked all 3 in oven at the same time together, so it took about 1-1/2 hours to bake it, When baked let it rest about 5 minutes or more, on cooling racks before removing from pan to platter, then it's ready to eat. Enjoy!!!!
