CITRUS CHIPOTLE GLAZED SHRIMP W/ ZESTY CORN SALSA

To the remaining 1/4 cup, add 1 Tbl honey Place the shrimp in a plastic bag with reserved 1/4 cup marinade and allow to sit for 20 minutes. While shrimp marinates, place corn and bell pepper skin side down over cooler side of grill. Turn corn every two minutes until lightly charred on all sides. Turn pepper after 3-4 mintes and cook for another 3 minutes. Remove corn, cut kernals with chefs knife by standing ear on its end. Remove pepper and dice into 1/4 inch squares. Combine pepper with corn and all other salsa ingredients. Remove shrimp form marinade, skewer shrimp and place over hot side of grill. Baste shrimp with honey mixture turn over, baste again and cook 2 minutes. Baste shrimp and turn, baste again and cook for another minute. Remove shrimp. Plate by placing a couple of spoonfuls of salsa in the middle of the plate with the shrimp removed from skewers and placed on top.
Tips:
- Prep ahead: Marinate the shrimp and make the salsa up to a day in advance to save time on busy weeknights.
- Choose the right shrimp: For the best results, use large or jumbo shrimp that have been peeled and deveined.
- Don't overcrowd the pan: When searing the shrimp, make sure to work in batches if necessary to avoid overcrowding the pan. This will help the shrimp to cook evenly and prevent them from steaming.
- Cook the shrimp until just opaque: Overcooked shrimp are tough and chewy, so cook them just until they turn pink and opaque. This will take about 2-3 minutes per side.
- Zest your own citrus: Freshly zested citrus adds a bright, flavorful punch to the glaze and salsa. If you don't have a zester, you can use a fine grater.
- Use ripe, fresh corn: Fresh corn on the cob is best for the salsa, but you can also use frozen or canned corn in a pinch.
- Taste and adjust the seasonings: Both the glaze and salsa can be adjusted to your liking. Add more chili powder or chipotle powder for a spicier flavor, or more honey or agave for a sweeter flavor.
Conclusion:
This citrus chipotle glazed shrimp with zesty corn salsa is a delicious and easy-to-make dish that's perfect for a weeknight meal or a special occasion. The shrimp are succulent and flavorful, and the salsa is a refreshing and tangy complement. Serve the shrimp with rice, quinoa, or your favorite grilled vegetables for a complete meal.
