CITRUS SALAD WITH GINGER YOGURT

Citrus Salad With Ginger Yogurt image

A great breakfast salad! This recipe calls for Greek yogurt, which is actually drained yogurt, and has a luxurious texture similar to that of sour cream. If you cannot find Greek yogurt, simply spoon 1 qt of plain yogurt into a colander lined with cheesecloth. Place the colander in a large bowl and let drain in the refrigerator overnight. I know the amount of crystallized ginger seems like a lot, but it isn't. It makes this dish!!!

Tips:

  • Choose the right citrus fruits: For the best flavor, use a variety of citrus fruits, such as oranges, grapefruits, lemons, limes, and tangerines. Look for fruits that are heavy for their size and have smooth, unblemished skin.
  • Segment the citrus fruits carefully: To avoid bitterness, segment the citrus fruits by cutting around the edges of the pith with a sharp knife. Then, gently remove the segments from the peel.
  • Make the ginger-yogurt dressing ahead of time: The dressing can be made up to 3 days in advance. This will allow the flavors to meld and develop.
  • Use fresh herbs: Fresh herbs, such as cilantro, mint, and basil, add a pop of flavor to the salad. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use half the amount.
  • Serve the salad immediately: The salad is best served immediately after it is made. The citrus fruits will start to release their juices and the salad will become watery if it sits for too long.

Conclusion:

Citrus salad with ginger-yogurt dressing is a refreshing and flavorful salad that is perfect for any occasion. The bright citrus flavors are complemented by the creamy ginger-yogurt dressing. This salad is also a good source of vitamins and minerals, making it a healthy choice for any meal.
