Yield This salad makes enough for about 15 people

Number Of Ingredients 11

3 pounds cabbage, shredded. You can use white/green or red (The shredding can be done in a food processor or by hand.)
2 carrots, sliced into disks about 1/4-inch thick
2 green peppers, cut into bite-size pieces
2 cucumbers, peeled and sliced
2 large vidalia onions, sliced (If vidalia onions are not available, use regular ones.)
4 teaspoons sugar dissolved in 1/4 cup warm water (Can substitute 4 packages of sweet and low.
Incidentally, it's just as tasty with the sweet and low.)
3/4 cup of white vinegar
1/2 cup of canola oil
About 1-1/2 teaspoons salt, garlic powder, celery salt, and pepper to taste
Marinate the above ingredients in the refrigerator. This salad can last for many weeks in the refrigerator

Steps:

  • The preparation takes a while as you're first cleaning and then cutting the vegetables. If you have a food processor, it cuts the time considerably to prepare this delicious salad.

Tips:

  • Use fresh, high-quality ingredients: The fresher the ingredients, the better your salad will taste. Buy your produce from a local farmer's market or grocery store, and make sure it's ripe and in season.
  • Don't overcrowd the salad: A salad should be light and refreshing, not heavy and stodgy. Avoid adding too many ingredients, or your salad will become difficult to eat and may lose its flavor.
  • Dress the salad lightly: A little bit of dressing goes a long way. Too much dressing will overwhelm the other flavors in the salad and make it soggy. Use a light hand when drizzling on the dressing, and toss the salad gently to coat the leaves evenly.
  • Serve the salad immediately: Salads are best enjoyed fresh. Once you've dressed the salad, serve it immediately. If you wait too long, the leaves will wilt and the dressing will become watery.

Conclusion:

The Claremont Salad is a delicious and refreshing salad that's perfect for a light lunch or dinner. With its combination of fresh greens, crunchy vegetables, and tangy dressing, this salad is sure to please everyone at your table. So next time you're looking for a healthy and flavorful salad, give the Claremont Salad a try.
