BISQUICK PEACH COBBLER

Baking mix and canned peaches are the keys to this ultra-easy peach cobbler that can be enjoyed any time of year. We love the rustic look of the cobbler in a cast-iron pan but you can also make it in a baking dish. Either way, a scoop of vanilla ice cream is the perfect topper.

Time 1h15m

Yield 8 to 10 servings

Number Of Ingredients 8

3/4 cup unsalted butter
1 1/2 cups baking mix, such as Bisquick Original Pancake and Baking Mix ™
1 1/2 cups milk, at room temperature
1 1/4 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 1/4 cups packed dark brown sugar
Three 15-ounce cans sliced peaches, drained
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 375 degrees F. Place the butter in a 12-inch round cast-iron skillet or a 9-by-13-inch baking dish and place in the preheating oven to just melt the butter, 5 to 10 minutes.
  • Whisk the baking mix, milk, cinnamon and nutmeg together in a medium bowl. Toss the brown sugar and peaches together in a separate medium bowl and set aside.
  • Remove the pan from the oven and swirl the butter or use a pastry brush to coat the bottom and sides of the pan, then pour the melted butter into the batter. Whisk until combined, then pour the batter into the buttered pan. Spoon the peaches and brown sugar syrup evenly over the top of the batter.
  • Bake until golden brown and the peach juices are bubbling, 45 to 55 minutes.
  • Let cool to room temperature before serving with ice cream.

Tips:

  • Use fresh or frozen peaches: Fresh peaches are ideal for this cobbler, but frozen peaches can also be used. If using frozen peaches, thaw them before using.
  • Peel and slice the peaches: Peel the peaches and slice them into thin wedges.
  • Make the Bisquick topping: In a medium bowl, whisk together the Bisquick mix, sugar, and baking powder. Then, cut in the butter until the mixture resembles coarse crumbs.
  • Assemble the cobbler: Place the peaches in a greased 9x13 inch baking dish. Sprinkle the Bisquick topping evenly over the peaches.
  • Bake the cobbler: Bake the cobbler at 375 degrees Fahrenheit for 30-35 minutes, or until the topping is golden brown and the peaches are bubbling.
  • Serve the cobbler: Serve the cobbler warm with a scoop of vanilla ice cream or whipped cream.

Conclusion:

This classic Bisquick peach cobbler is a delicious and easy-to-make dessert. It's perfect for a summer potluck or picnic. With its sweet and juicy peaches and its flaky, buttery crust, this cobbler is sure to be a hit with everyone who tries it.
