CAROLINA STYLE RIBS
Mustard based sauces are definitively South Carolina. This one will definitely satisfy your needs. This is for the big fatty ribs, not the baby backs. Do not trim the fat from the ribs. This method renders out fat and keeps ribs moist. If you do not have a smoker available, this can also be done in the oven.

CLASSIC BBQ RUB
Editor's note: The recipe and introductory text below are adapted from Elizabeth Karmel's Web site, girlsatthegrill.com . This rub has all the classic barbecue notes: salt, spice, sweet, and smoky. It is particularly great on ribs but works with pork chops and tenderloin, chicken and even catfish for an authentic low 'n slow barbecued flavor.

Steps:
- Combine paprika, salt, sugar, brown sugar, cumin, chile powder, black pepper, cayenne, onion powder, garlic powder, celery salt, and oregano in bowl; mix well. For a smoother rub, puree ingredients in a spice grinder until well combined and all pieces are uniform (the rub will be very fine and tan in color).
- Extra rub can be stored in an airtight container for up to six months.
Tips:
- Use a variety of spices to create a complex flavor profile. Common spices used in Carolina BBQ rubs include paprika, brown sugar, garlic powder, onion powder, cumin, chili powder, and black pepper.
- Adjust the heat level of the rub to your preference. Cayenne pepper or red pepper flakes can be added for a spicy kick.
- Make sure the rub is evenly distributed over the meat. This will help ensure that the meat is evenly flavored.
- Let the meat rest for at least 30 minutes before cooking. This will allow the rub to penetrate the meat and develop its flavor.
- Cook the meat over indirect heat to prevent it from drying out. A smoker or grill with a lid is ideal for this.
- Baste the meat with a mixture of vinegar, water, and spices during the cooking process. This will help keep the meat moist and flavorful.
- Let the meat rest for at least 10 minutes before serving. This will allow the juices to redistribute throughout the meat, making it more tender and flavorful.
Conclusion:
Carolina BBQ rub is a versatile seasoning that can be used on a variety of meats. It is a great way to add flavor and depth to your favorite dishes. Whether you are smoking a pork shoulder or grilling a chicken breast, a Carolina BBQ rub will help you create a delicious and memorable meal.
