Classic saffron rice is a flavorful and aromatic dish that is enjoyed around the world. It is often served with stews, meats, or vegetables and is a staple in many Middle Eastern and South Asian cuisines. The key to making perfect saffron rice is to use high-quality saffron and to cook the rice in a flavorful broth. Saffron is a spice derived from the saffron crocus flower, and it has a unique, slightly bitter flavor and a beautiful golden color. When cooked with rice, saffron infuses the rice with its flavor and color, creating a dish that is both delicious and visually appealing.

SAFFRON RICE
A pinch of brilliant burnt-orange saffron, the stigmas of small purple crocuses, gives a dish a slightly bitter and floral flavor. Saffron is traditionally used to perfume bouillabaisse, but it can add a layer of fragrance and color to aromatic basmati. If you don't have saffron, use turmeric (Indian saffron) instead.

EASY SAFFRON RICE
Steps:
- Gather the ingredients.
- Pour the stock into a medium-sized pot with a tight-fitting lid. Place the pot on the stove over high heat.
- While the stock is coming to a boil, add the turmeric, saffron, chile (if using), and a squeeze of lemon or lime juice. Stir well.
- Add the rice plus 1 1/2 tablespoons fish sauce (or 1/4 teaspoon salt) and stir. Bring to a boil.
- Reduce the heat to low and cover tightly with a lid. Cook 12 to 15 minutes, or until liquid has been absorbed by the rice. (Insert a fork or knife straight down into the pot and push the rice aside. If you see liquid, it still needs more time to cook.)
- When most of the liquid is gone, turn off the heat and place the lid on tightly. Allow the pot to remain on the burner for another 5 to 10 minutes, or until you're ready to eat. The residual heat inside the pot will finish steaming the rice. The rice will stay warm in this way for 1 hour or more.
- Before serving, remove the lid and fluff rice with chopsticks or a fork. Taste test for salt, adding 1/2 tablespoon more fish sauce or a little more salt if needed (the amount will depend on the saltiness of your stock). If the rice tastes too salty, add another squeeze of lemon juice.

CLASSIC SAFFRON RICE
This is easy, simple and wonderful. The original recipe which was printed in the Spring 2005 Penzeys catalog, calls for long-grain rice; however, I liked it much better with basmati. Also, the original recipe called for minced onion but I found it worked very well with dried onion. I indicated that the butter is optional, because I did not add it.

CLASSIC SAFFRON RICE
Saffron is the stigma of the fall-flowering crocus. These stigma are worth thousands of dollars per pound. Saffron is so valuable because it is a very labor-intensive crop; only 5-7 pounds of saffron can be produced from each acre of land. This makes saffron the most expensive spice by weight.

INDIAN SAFFRON RICE
Indian saffron is richer, darker in its red-orange color then the Spanish or Italian, and gives a better flavor to rice. The saffron should always be steeped in hot water ahead of time and used as part of the liquid in the recipe. The following is a recipe prepared in the Indian manner.

Steps:
- In a large bowl wash rice in several changes of cold water until the water runs clear and drain it in a fine sieve. In a large heavy saucepan heat the oil over moderately high heat until it is hot but not smoking, add the cinnamon stick, the cloves, and the cardamom pods, if using, and fry the spices, stirring, for 30 seconds, or until the cloves are puffed slightly. Add rice and cook the mixture, stirring, for 1 minute, or until the rice is opaque. Add 2 1/4 cups water and the salt, bring the mixture to a boil, and cook the rice, covered, over low heat for 15 minutes.
- While the rice is cooking, in a heatproof bowl set over a small pan of simmering water heat the saffron for 3-4 minutes, or until it is brittle. Add milk, heat the mixture, stirring occasionally, until it is hot, and remove the pan from the heat. Drizzle the saffron mixture over the rice and continue to cook the rice, covered, for 5 minutes. Remove the pan from the heat and let the rice stand, covered, for 5 minutes.
Tips:
- Use high-quality saffron. The better the saffron, the more flavorful your rice will be. Look for saffron that is a deep red color and has a strong aroma.
- Toast the saffron before using it. This will help to release its flavor and aroma. To toast the saffron, heat a small pan over medium heat and add the saffron. Cook for 1-2 minutes, stirring constantly, until the saffron is fragrant.
- Use a good quality basmati rice. Basmati rice is a long-grain rice that is known for its delicate flavor and aroma. It is the perfect rice for making saffron rice.
- Soak the rice before cooking it. This will help to remove the starch from the rice and make it more fluffy.
- Use a heavy-bottomed pot to cook the rice. This will help to distribute the heat evenly and prevent the rice from sticking to the bottom of the pot.
- Cook the rice over low heat. This will help to prevent the rice from becoming mushy.
- Let the rice rest before serving it. This will allow the rice to absorb all of the flavors and aromas.
Conclusion:
Saffron rice is a delicious and versatile dish that can be served with a variety of main courses. It is a popular dish in many countries around the world, and it is sure to impress your guests. With these tips, you can make the perfect saffron rice every time.
