Steps:
- Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
- Place the eggs into an electric kettle and cover with cold water by at least 1-inch. Turn the kettle on. Once the water comes to a boil, the kettle will turn itself off. Leave the eggs in the water for 15 minutes. Remove and peel off the shell. Slice each egg into 8 pieces and set aside.
- While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside.
- Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
- Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper, as desired. Serve immediately.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Spread the slivered almonds onto a baking sheet, and toast until the nuts start to turn golden brown and become fragrant, 5 to 10 minutes. Watch the nuts carefully as they bake, because they burn quickly. Once toasted, set the nuts aside to cool to room temperature.
- Mix together the mayonnaise, milk, and sugar in a large salad bowl. Stir in the bacon bits and Parmesan cheese until the dressing is well combined and creamy.
- Place the spinach leaves, chopped cauliflower, and toasted almonds into the salad bowl, and stir lightly to coat with dressing.

CLASSIC SPINACH SALAD
This is a favorite salad of mine when I want something that's quick to prepare. If I have some pre-boiled eggs in the refrigerator I can get this on the table in about 5 minutes. (Note: the recipe calls for 3 tablespoons of jarred bacon pieces; however, I usually fry 3 slices of bacon, crumble them and use in place of the jarred bacon. This makes the prep time about 10 minutes longer.)

Chasen's was the "in" place in Hollywood for many years until it closed a few years ago. We got this recipe out of one of the "ladies' magazines" over 40 years ago. We thought we had lost the recipe but it has turned up - and I am glad.

Tips:
- For the best flavor, use fresh, baby spinach leaves. If using mature spinach, remove the tough stems before using.
- To add a bit of sweetness to the salad, try using a combination of red and green grapes.
- If you don't have any walnuts on hand, you can substitute another type of nut, such as almonds or pecans.
- For a more savory salad, use crumbled bacon instead of walnuts.
- If you don't have any red onion on hand, you can use a white or yellow onion instead.
- To make a vegetarian version of the salad, omit the bacon and use vegetable broth instead of chicken broth.
- For a vegan version of the salad, omit the bacon and use vegetable broth instead of chicken broth. Also, use a plant-based vinaigrette dressing.
Conclusion:
Spinach salad is a delicious and healthy salad that can be enjoyed as a main course or a side dish. It is packed with nutrients, including vitamins A, C, and K, as well as folate and iron. The dressing is also a good source of healthy fats, thanks to the olive oil. So next time you're looking for a healthy and satisfying salad, give this spinach salad recipe a try.
