1/4 cup blue cheese salad dressing
2 spinach or whole wheat tortillas (8 inches)
1 cup shredded cooked chicken
1 cup spring mix salad greens
1 medium tomato, halved and sliced
4 cooked bacon strips
1/2 medium ripe avocado, peeled and sliced
1 tablespoon sliced ripe olives
1 tablespoon crumbled blue cheese

Steps:

  • Spread dressing over tortillas to within 1/2 in. of edges. Layer with the remaining ingredients. Roll up tortillas.

1 boneless skinless chicken breast, cooked and chopped
12 slices bacon
4 flour tortillas, burrito size
4 cups mixed salad greens
1 1/3 cups grape tomatoes, halved
1 cup cucumber, sliced
1/4 cup red onion, thinly sliced
4 tablespoons blue cheese, crumbled (or any other cheese)
1/2 cup ranch dressing
2 hard-boiled eggs, chopped (optional)
avocado, sliced (optional)

Steps:

  • In a skillet over medium heat, cook bacon until crispy.
  • Remove and place on paper towel-lined surface to drain.
  • Chop bacon.

1 1/3 c grape tomatoes, halved
1 c cucumber, sliced
1/4 c red onion, thinly sliced
4 Tbsp crumbled blue cheese (or any other cheese)
1/2 c ranch dressing
2 hard-boiled eggs, chopped, optional
1 avocado, sliced, optional

Steps:

  • 1. In a skillet over medium heat, cook bacon until crispy. Remove and place on paper towel-lined surface to drain.
  • 2. Chop bacon.
  • 3. Heat wraps until pliable and layer wrap with lettuce mix and vegetables. (I usually nuke the tortillas for about 8 seconds to make them pliable).
