2 ounces coconut rum (Bacardi)
5 fresh mint leaves, torn
1 ounce coconut cream (Coco Lopez)
splash sweetened lime juice (Rose's)
club soda
mint sprig, for garnish

Steps:

  • Add ingredients, except club soda, to a cocktail shaker with ice cubes.
  • Shake several times and pour into a chilled high-ball glass.
  • Top with club soda and serve with a sprig of mint to garnish.

1 cup water
1 cup white sugar
1 ½ cups fresh mint leaves, divided
⅔ cup cream of coconut
⅓ cup lime juice
1 tablespoon grated lime zest
1 cup sparkling water

Steps:

  • Combine water and sugar in a saucepan; bring to a boil, stirring until sugar is completely dissolved and syrup forms, about 5 minutes.
