Steps:
- Place the rice, 3/4 cup of water, the coconut milk, sugar and the salt in a medium saucepan and stir to combine. Bring the rice to a boil, then reduce the heat to medium-low and simmer until the water has evaporated to just below the level of the rice and little holes begin to form on the surface, stirring occasionally so that the rice doesn't stick to the bottom of the pan and burn. Reduce the heat to the lowest setting, cover the saucepan and continue to cook until the rice is tender, 20 to 25 minutes.
- Fluff the rice with a fork and stir in the raisins. Cover the saucepan and let it sit off of the heat until the raisins are plump and warm, 10 minutes. Sprinkle the rice with the toasted coconut and serve.
COCONUT LENTILS WITH RICE
Years ago I made this recipe for my kids, and they loved it. One of my daughter's friends would always request this dish when she came over to visit. I recommend basmati rice for this dish. -Diane Donato, Columbus, Ohio

Tips:
- Choose the right lentils. Brown or green lentils work best in this recipe, as they hold their shape well and have a slightly nutty flavor. You can also use yellow or red lentils, but they will cook down more and have a softer texture.
- Rinse the lentils thoroughly. This will help to remove any dirt or debris. You can also soak the lentils for 30 minutes before cooking, but this is not necessary.
- Use fresh coconut milk. Canned coconut milk can also be used, but fresh coconut milk has a richer flavor and creamier texture. If you are using canned coconut milk, be sure to shake the can well before opening.
- Add vegetables. This recipe is a great way to use up leftover vegetables. You can add chopped carrots, celery, onions, bell peppers, or any other vegetables that you like. You can also add frozen vegetables to the pot.
- Season to taste. This recipe is fairly mild, so you can add more spices or herbs if you like. Some popular additions include cumin, coriander, curry powder, or chili powder. You can also add a splash of lime juice or vinegar for a bit of acidity.
Conclusion:
Arroz con lentejas y coco is a delicious and easy-to-make dish that is perfect for a weeknight meal. The lentils and rice are cooked in a flavorful coconut milk broth, and the dish is topped with fresh cilantro and lime wedges. This recipe is a great way to use up leftover vegetables, and it is also a good source of protein and fiber.
