COCONUT LIME CAULIFLOWER RICE
A staple of my Whole30 dinners, this cauliflower rice has a zingy lime and coconut flavor. Warm it up for lunch, topped with leftover veggies. Be careful not to overcook the cauliflower rice or the consistency turns mushy and unappealing. If you're not a fan of cilantro, just swap it out with parsley or omit it entirely.

Steps:
- In a large sauté pan over medium heat, warm the olive oil until shimmery. Add the green onions and sauté about a minute, or until soft. Add the garlic and sauté another 30 seconds or so, being careful not to burn the garlic.
- Add the cauliflower rice and coconut milk to the sauté pan and stir to combine. Cook approximately 3 minutes on medium heat, stirring. Cauliflower should be al dente and not completely soft, or the texture will be mushy.
- Turn off the heat and stir in the fresh cilantro, lime juice, salt and pepper to taste. Taste for seasoning and add more lime juice or salt if necessary.

- Break down a head of cauliflower in a food processor until it's the size of rice.
- Heat sesame oil over high. Add garlic and fry until fragrant.
- Add the beef, chicken, pork, shrimp or tofu and cook until 80% done.
- Add carrots and cauliflower, stir until thoroughly incorporated. Mix in peas.
- Push ingredients to the sides of the pan to create a well. Pour in 2 whisked eggs and let it set for 15 seconds. Scramble eggs and fold into the cauliflower rice.
- Season with white pepper and stir in soy sauce.
- Garnish with chopped green onions and serve.

- Rinse rice until the water runs clear; drain. Heat coconut oil and butter in a large skillet over medium-high heat. Cook and stir rice and coconut flakes for 3 to 4 minutes. Stir in the lime juice, then add the coconut milk, chicken broth, salt and lime zest. Bring to a low boil, then cover and reduce heat to low. Cook for 20 minutes. Remove from heat and keep covered for 5 minutes. Fluff with fork and season with pepper.
