POLLO CRIOLLO (CREOLE-STYLE CHICKEN) image

1/2 c. olive oil
2 Tbsp. Sherry
1/2 tsp. salt
1 tsp. ground oregano
1/2 tsp. ground cumin
2 Tbsp. minced onion (dry)
4 garlic cloves, peeled and minced
1 Tbsp. Worcestershire sauce
12 chicken bone in thighs

Steps:

  • Wash chicken and pat dry. Combine ingredients for a marinade, coat chicken well, refrigerate at least 2-3 hours (all day if possible) Bake in 400 degree oven for 1 hour, basting (may take longer depending on oven). Make sure chicken is done, then broil to brown, 5 minutes or more. Serve over rice, top with marinade; great with green beans!
