10 Garlic cloves - crushed
5 - 16 fresh Red Chilies (Bird's Eye preferred), to taste - roughly chopped
1/2 Red Onion - thinly sliced
1 medium Tomato - cut into wedges
2.5-inch piece of Ginger - peeled and thinly sliced
2.5-inch piece of Galangal - peeled and thinly sliced
4 Lemongrass stalks - bottom woody part and upper tough parts of the stalk chopped off and outer skin removed and discarded, then thinly sliced at an angle
8-10 Makrut Lime Leaves - destemmed and broken into four pieces each
5-6 leafy sprigs Coriander (Cilantro) - roughly chopped
150 grams / 5.3 ounces Mushrooms (any kind - see notes*) - rinsed and pat-dried
454 grams / 1 pound Chicken Thighs (or breasts), boneless, skinless - cleaned and pat-dried, excess fat trimmed, and thinly sliced into bite-sized pieces
5 TBLS freshly squeezed Lime Juice (approximately the juice of 4 small Thai limes)
1 TBLS Canola Oil (or any neutral flavored cooking oil)
1 TBLS Chili Oil (optional - pure chili oil without flakes/seeds)
2-4 Bird's Eye Thai Dried Red Chilies (optional), to taste
25 grams / 0.8 ounces (1/2 disc) Coconut Sugar, to taste (substitute with palm sugar, or 2 TSP granulated white or light brown sugar if unavailable)
2 TBLS Fish Sauce, to taste
1.5 TSP Kosher Salt, to taste
1-2 TSP ground Thai Chili Powder (optional), to taste
800ml / 27 ounces (2 large cans) Coconut Milk (full-fat preferred)
200ml / 3/4 cup + 1 tablespoon Water
To Serve (optional): Reserved coriander, drizzle of chili oil, steamed rice, lime wedges for squeezing

Steps:

  • Crush the garlic with the flat side of your knife and roughly chop the fresh red chilies. Transfer to a mortar and pestle and pound into a coarse paste. Prepare the red onion, tomato, ginger, galangal, lemongrass, coriander, makrut lime leaves, and mushrooms as indicated in the 'Ingredients' section. Clean and pat-dry the chicken thighs and trim off any excess fat. Thinly slice into bite-sized pieces and set aside. Squeeze the limes in a lemon/citrus squeezer and reserve the juice in a small bowl or bottle.
  • Heat 1 tablespoon of canola oil and 1 tablespoon of chili oil (if using) in a large stockpot or Dutch oven over medium-high heat. Once hot, add the red onion and sauté for 1-2 minutes or until slightly softened. Add the smashed garlic chili paste and continue sautéing for 30 seconds or until fragrant.
  • Pour in half (400ml / 13.5 ounces) of the coconut milk, and add the galangal, ginger, makrut lime leaves, and lemongrass. Stir to combine and bring to a gentle simmer for 2-3 minutes.
  • Add the remaining coconut milk (400ml / 13.5 ounces), mushrooms, tomato wedges, and (200ml / 3/4 cup + 1 tablespoon) water.
  • Give everything a good stir, then cover the pot and let simmer for 10-12 minutes.
  • Uncover and reduce the heat to medium. Add the chicken pieces and stir to combine. Simmer for 4-5 minutes, until the chicken has just cooked through.
  • Switch off the heat and stir in the Thai dried chilies, coconut sugar, fish sauce, kosher salt, Thai chili powder, and lime juice. Taste and adjust the seasonings by adding more fish sauce, lime juice, or sugar if needed.
  • Remove the pot from the heat and stir in 2 tablespoons of the chopped coriander (reserve some for garnish).
  • Ladle the soup evenly into bowls and garnish with the remainder coriander and a drizzle of chili oil (if using). Enjoy on its own, or serve with warm steamed rice and lime wedges for squeezing if desired.

2 stalks lemon grass
3 tablespoons sliced Siamese ginger
4 cloves garlic, cut up
3 peppercorns
7 coriander roots, cut up
23 shallots
4 cups medium-thick coconut milk (see recipe)
1 pound sliced white meat chicken
5 red chiles, seeded and finely minced (prik khee nu)
4 tablespoons fish sauce (nam pla)
4 tablespoons lime juice
5 makrut lime leaves, finely shredded
3 sprigs coriander, chopped

Steps:

  • Wash and trim root ends of lemon grass. Peel off tough layers and slice bottom 6 inches thinly. Discard rest of the lemon grass. Chop one tablespoon.
  • With a food processor running add chopped lemon grass, 1 tablespoon sliced ginger, the garlic, peppercorns and coriander roots and shallots and process to rough paste.
  • Bring 1 cup of the coconut milk to a boil and add lemon grass mixture. Keep stirring, reduce heat and add chicken, the remaining coconut milk and the remaining ginger and lemon grass. Return mixture to a boil. Reduce heat and simmer until chicken is tender, about 3 minutes longer.
  • Add chilies, fish sauce and lime juice to soup.
  • Decorate with lime leaves and coriander sprigs and serve.

1 (1 inch) galangal or 1 (1 inch) gingerroot
1 stalk lemongrass, trimmed and sliced thin
2 kaffir lime leaves
2 (14 ounce) cans unsweetened coconut milk
1 lb boneless skinless chicken breast, sliced thin
2 tablespoons roasted chili paste (nam phrik pao)
1/4 cup fresh lime juice
2 1/2 tablespoons golden brown sugar
2 1/2 tablespoons fish sauce
1/2 lb straw mushroom
1/2 lb oyster mushroom
5 small Thai red chili peppers, sliced in half lengthwise
1/4 cup fresh cilantro, chopped (garnish)

Steps:

  • Bring the stock, lime leaves, lemon grass, sugar, galangal and chili paste to a boil in small pot.
  • Add the coconut milk and bring to a simmer.
  • Add the chicken and mushrooms and bring to a simmer, quickly stir in the lime juice and fish sauce. Float the chilies on the soup and serve, garnishing with cilantro.
  • I serve this dish with sticky rice on the side and a quick salad of chilies, vinegar, sugar, onion and cucumber.

¾ pound boneless, skinless chicken meat
3 tablespoons vegetable oil
2 (14 ounce) cans coconut milk
2 cups water
2 tablespoons minced fresh ginger root

2 tablespoons vegetable oil
2 teaspoons peeled and grated fresh ginger
1 stalk lemongrass, split in half and sliced
2 teaspoons red curry paste
4 cups chicken broth
5 keffir fresh lime leaves, hand torn
2 small red chilies, cut thinly crosswise (remove seeds if you want less heat)
3 tablespoons fish sauce
1 tablespoon light brown sugar
3 (13 1/2 ounce) cans coconut milk
1/2 lb fresh shiitake mushrooms, sliced or 1/2 lb straw mushroom, trimmed but left whole
1 1/4 lbs chicken thighs, boned, skinned and thinly sliced
2 tablespoons fresh lime juice
1/4 cup chopped fresh cilantro
8 lime wedges
2 teaspoons chili oil, to drizzle before serving (optional)

Steps:

  • Heat the oil in a large pot over medium heat. Add the ginger, lemongrass, and curry paste and stir and cook in the heated oil for 1 minute. Slowly pour the chicken broth over the mixture, stirring continually. Add the lime leaves and chillies and simmer gently for 10 minutes to infuse the broth.
  • After 10 minutes, stir in the fish sauce and brown sugar; simmer for 15 minutes. Stir in the coconut milk and mushrooms; cook and stir until the mushrooms are tender, about 5 minutes. Add the chicken and cook until no longer translucent, about 2-5 minutes. Watch carefully, do not overcook. Remove from heat and stir in the lime juice. Taste and adjust seasoning if necessary. 1 cup water or 1 cup chicken broth
2 chicken breasts
1/2 cup coconut milk
4 sliced thinly galangal
1/2 onion, cut in 4 chunks
1 -2 red Thai chile, bruised
5 -7 mushrooms
1/2 teaspoon salt
1 tablespoon fish sauce

Steps:

  • Put the chicken broth or water into the pot and bring to boil over medium to medium high heat.
  • Add salt, lemongrass, galanga allow to simmer for 10 minutes Reduce the medium heat. Add sliced chicken in to the pot- do not stir until the soup boils again to avoid the releasing it's smell.

3 cups chicken stock (preferably low sodium)
1 can coconut milk
1 stalk lemongrass, lightly crushed
4 fresh lime leaves (use 2 Tbl lime juice as substitute)
1 tablespoon shrimp paste
3 small Thai red chili peppers, thinly sliced (remove seeds for less spice)
1 inch ginger, sliced
3 tablespoons fish sauce (or more to taste)
1 tablespoon soy sauce
1/2 tablespoon palm vinegar (or white vinegar)
1/2 drop bergamot oil (this really does make the soup)
2 boneless chicken breasts, thinly sliced
8 ounces mushrooms, thinly sliced
1 bunch cilantro, roughly chopped
2 small bok choy or 2 small other greens
1 package bean thread noodles (clear, thin)

Steps:

  • Gently simmer all but last 5 ingredients for 30 minutes.
  • Add chicken and mushrooms and simmer for another 5 minutes.
  • Add noodles, bok choi, cilantro.
  • Let stand 5 minutes.
