  • In small microwavable bowl, microwave caramels and milk uncovered on High 1 minute to 1 minute 30 seconds, stirring once, until caramels are melted. Spoon 1/2 teaspoon caramel into indentation in each cookie. Cool 15 minutes.
  • In another small microwavable bowl, microwave chocolate chips and shortening uncovered on High 1 minute to 1 minute 30 seconds or until chips can be stirred smooth. Drizzle chocolate over cookies. Let stand about 30 minutes or until chocolate is set.

Tips:

  • Do not overmix the batter. Overmixing will make the cookies tough.
  • Roll the dough into small balls and then use the back of a spoon to make an indentation in the center of each ball. This will help the cookies to hold the coffee and milk filling.
  • Bake the cookies until they are just set. Overbaking will make them dry and crumbly.
  • Allow the cookies to cool completely before filling them. This will help to prevent the filling from seeping out.
  • For the coffee and milk filling, use a strong coffee and whole milk for the best flavor. You can also add a little bit of sugar or vanilla extract to taste.
  • If you don't have a piping bag, you can use a ziploc bag with the corner snipped off to fill the cookies.
  • Store the filled cookies in an airtight container at room temperature for up to 3 days.
