- Trim the tenderloins of all fat and silverskin. Place them in a shallow baking dish large enough to hold them without crowding.

- Position an oven rack in the top third of the oven and preheat the broiler to high.
- Combine the coffee, brown sugar, 1 1/2 teaspoons salt, 1 teaspoon black pepper, garlic powder, crushed red pepper, cumin and paprika in a small bowl and mix well.
