1 cup strong brewed coffee
1/4 cup molasses
6 fresh thyme sprigs
2 tablespoons cider vinegar
1 tablespoon Dijon mustard
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon lemon-pepper seasoning
1/2 teaspoon ground ginger
4 bone-in pork loin chops (1 inch thick)

Steps:

  • In a large bowl, combine the first nine ingredients. Pour 1/2 cup marinade into a large resealable plastic bag; add the pork chops. Seal bag and turn to coat; refrigerate at least 2 hours. Cover and refrigerate remaining coffee mixture until ready to cook., For glaze, place remaining coffee mixture in a small saucepan. Bring to a boil; cook until liquid is reduced to about 1/2 cup., Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Grill chops, covered, over medium heat or broil 4-5 in. from the heat 4-5 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 145°; medium, 160°). Let stand 5 minutes before serving. Spoon glaze over chops.

1 cup cool strong coffee
6 ounces molasses, by weight
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
2 cloves garlic, minced
1 teaspoon kosher salt
1/2 teaspoon ground ginger
6 to 8 sprigs fresh thyme
1/2 teaspoon freshly ground black pepper
4 (6 to 8-ounce) bone-in, 1-inch thick pork chops

Steps:

  • Place all of the ingredients into a 1-gallon zip top bag, seal, and shake to combine. Place in the refrigerator to marinate for at least 2 hours or up to overnight.
  • Preheat grill to medium-high.
  • Remove the pork chops from the marinade. Transfer the marinade to a small saucepan and place over high heat. Bring to a boil, reduce heat to medium-high, and boil gently, stirring often, until reduced to about 1/2 cup liquid, 12 to 15 minutes. Remove the thyme stems after the glaze has reduced. Meanwhile, grill pork chops 3 to 4 minutes per side or until they reach an internal temperature of 145 degrees F. Allow the pork chops to rest 4 to 5 minutes before serving with the glaze.

Just like the Coffee Cured Filet from Stoney River. Sounded weird when I first heard of it, but after tasting it, it tastes nothing like coffee and is an unbelievably flavorful steak. A staple in our household since perfecting the recipe!

4 beef tenderloin, filet
2 1/2 cups strong espresso or 2 1/2 cups darkest roast non-flavored coffee
1/4 cup olive oil
1/4 cup molasses (Regular Strength)
1 tablespoon brown sugar
1 1/2 tablespoons kosher salt (or Sea Salt)
1 teaspoon cumin
1/2 cup ice

Steps:

  • Place all the liquid and dry ingredients into a large bowl or zip-lock bag and mix until dissolved.
  • (HINT: Measure the olive oil first and then the molasses, it will slide right out of the measuring cup if you do the oil first).
  • Add ice to cool the mixture.
  • Add the filets and marinate at least 6 hours for best results. I like to mix them up and flip the meat every couple of hours, but not required.
  • When ready to cook the steaks, heat an iron skillet or griddle as hot as you can get it and sear the outside of the steaks for a minute or two until dark and crisp on the outside, then place on the grill to cook to your wellness liking the rest of the time.
  • (HINT: I recommend searing the steaks outside on a grill side burner if possible. It makes a mess of your cooktop inside otherwise.).
