COFFEE MUG CAKE
I was wanting a small serving of cake, but didn't want to make the whole box. This is what I came up with. It came out light and fluffy and hit the spot. I think it could be used with any boxed cake, but I used a Betty Crocker brand. Also, if you decide to use the real egg try beating the whole egg in a separate bowl and then pouring off about half.

Steps:
- Using a 10 to 16 ounce microwave safe coffee mug, spray the insides with the non stick spray.
- Add 7 TBS of the box cake mix. (Save the rest of the mix in a sealed container for later use.).
- Next add the oil and water to the cup and mix thoroughly.
- Finally, add the egg and mix well.
- Place in microwave and microwave on high for 3 minutes. The cake may rise above the top of the cup, but don't worry. When finished, check center with a toothpick. If pick comes out clean, then the cake is done.

- Remember microwave strengths may vary and this might alter your time.
COFFEE MUG CHOCOLATE CAKE
This is great for those times when I have a chocolate craving that just won't go away. It's quick, easy and makes a very small portion. I've tried it with semi-sweet chocolate chips, can't wait to try it with peanut butter chips and white chocolate chips. Great for an afternoon snack for the kids and it's simple enough that they can make it themselves.

LIGHT COFFEE MUG CHOCOLATE CAKE
REVISED: Thanks for the feedback - I've made some adjustments - hope you all enjoy. This is a fluffier version of the popular coffee mug chocolate cake. I make this as a quick snack or when you "need" a quick dessert - and the kids love making it themselves.

Steps:
- Microwave butter and chopped chocolate in large bowl, stirring often, until melted, about 1 minute. Whisk sugar, eggs, cocoa, vanilla, and salt into chocolate mixture until smooth. In separate bowl, combine flour and baking powder. Whisk flour mixture into chocolate mixture until combined. Divide batter evenly between 2 (11-ounce) coffee mugs. Place mugs on opposite sides of microwave turntable. Microwave at 50 percent power for 45 seconds. Stir batter and microwave at 50 percent power for 45 seconds (batter will rise to just below rim of mug). Press 2 chocolate pieces into center of each cake until chocolate is flush with top of cake. Microwave at 50 percent power for 35 seconds (cake should be slightly wet around edges of mug and somewhat drier toward center). Let cakes rest for 2 minutes. Serve.
Tips:
- Use a fork to whisk the ingredients together in the mug. This will help to prevent lumps and ensure that the cake is evenly mixed.
- If you don't have a microwave, you can also bake the cake in a preheated oven at 350 degrees Fahrenheit for 10-12 minutes.
- Be careful not to overcook the cake, or it will become dry and crumbly. The cake is done when a toothpick inserted into the center comes out clean.
- You can add a variety of mix-ins to your mug cake, such as chocolate chips, nuts, or fruit. Get creative and experiment with different flavors!
- If you want a gooey, lava-like center, microwave the cake for a few seconds less than the recommended time.
Conclusion:
