Steps:

  • Place half of the onions in a 5-qt. slow cooker. Top with garlic and half of the beef. Top with remaining onion and beef. Combine coffee and soy sauce; pour over beef. 2 tablespoons butter
4 pounds chuck roast
1 tablespoon butter
salt to taste
1 onion, chopped
6 cups brewed coffee
2 cups canned mushrooms
3 tablespoons cornstarch

Steps:

  • Melt 2 tablespoons of butter in a large saucepan over medium high heat. Add the roast and sear on all sides until well browned; set aside.
  • In the same saucepan, melt the remaining butter, add the salt and onions and saute for 5 minutes. Return the meat to the saucepan and pour in the coffee and the mushrooms.
  • Bring to a boil, reduce heat to low and simmer for 5 hours, turning meat over halfway through cooking time.
  • To make gravy: Remove a cup of the coffee mixture from the saucepan, combine with the cornstarch, stirring until smooth, and return to the simmering pan. Mix well, remove from heat and serve.

2 teaspoons canola oil
1 beef sirloin tip roast (2-1/2 pounds), halved
1-1/2 cups brewed coffee
1-1/2 cups sliced fresh mushrooms
1/3 cup sliced green onions
2 garlic cloves, minced
1 teaspoon liquid smoke, optional
1/2 teaspoon salt
1/2 teaspoon chili powder
1/4 teaspoon pepper
1/4 cup cornstarch
1/3 cup cold water

Steps:

  • Select saute or browning setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add 1 teaspoon oil. When oil is hot, brown 1 roast half on all sides. Remove; repeat with remaining beef and oil. Add coffee to pressure cooker. Cook 1 minute, stirring to loosen browned bits from pan. Press cancel. Add mushrooms, green onions, garlic, liquid smoke if desired, salt, chili powder, pepper and beef., Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 50 minutes. Let pressure release naturally. Press cancel., Remove roast and vegetables to a serving platter; tent with foil. Let stand 10 minutes before slicing. 2 tablespoons flour
10 baby carrots
6 small potatoes
2 small onions
3 stalks celery
8 ounces brewed coffee
4 ounces Italian dressing
1/4 teaspoon salt
pepper
garlic, taste
2 beef bouillon cubes (dissolved in 1/2 c. hot water)
1/4 cup Dale's Steak Seasoning (optional)
1/4 cup Worcestershire sauce (optional)
8 ounces canned tomatoes, diced

  • FOR MARINATING: place roast in ziploc bag. Pour marinade ingredients over it. Place in refrig. 8-24 hours, turning once. Remove roast from bag. Save marinade.

  • For the rub:.
  • Whisk rub ingredients together in small bowl.

1 1/2 teaspoons unflavored gelatin (from one 1/4-oz envelope)
2 teaspoons vanilla
For topping
1/4 cup packed dark brown sugar
1 cup chilled heavy cream
Scant 1/4 teaspoon curry powder

Steps:

  • Make gelée:
  • Brew ground coffee in a filter-style coffeemaker (not electric) or a sieve lined with a paper filter using 2 cups boiling-hot water.
  • Meanwhile, bring granulated sugar and remaining 1/4 cup hot water to a boil in a small saucepan, stirring until sugar is dissolved, then remove from heat.
  • Sprinkle gelatin over 1 tablespoon cold water and let soften 1 minute. Stir together hot coffee, sugar syrup, and vanilla in a metal bowl, then add gelatin mixture, stirring until dissolved. Chill, covered, until softly set, at least 8 hours.
  • Make topping:

3 - 5 lb chuck roast
salt and pepper to taste
1 Tbsp oil
2 onions sliced
2 c beef broth
2 c coffee
1 Tbsp balsamic vinegar
2 bay leaves
2 sprigs thyme
1 Tbsp flour mixed into 1 tablespoon water
salt and pepper to taste

Steps:

  • 1. Season the beef with salt and pepper. Heat the oil in the pan. Add the beef and brown on all sides and set aside.
  • 2. Add the onion to the pan and saute until tender for 3-5 minutes. Add the beef and deglaze the pan.
  • 3. Add the beef back to the pan along with the coffee, balsamic vinegar, bay leaves and thyme and bring to a simmer.
  • 4. Cover and transfer to a preheated 325 oven and bake until fork tender about 3-5 hours. Set the beef aside cover and let it cool.
  • 5. Strain the solids from the gravy and skim off the fat. Add the flour and water mixture and simmer until it thickens a few minutes. Season the gravy with salt and pepper.
