3 tablespoons soy sauce
1 teaspoon hot chili paste
1 teaspoon minced fresh ginger
Pinch of sugar
2 tablespoons sesame seeds toasted

Steps:

  • Prepare an icewater bath. Bring 3 quarts of salted water to a boil. Add the spinach and blanch quickly, 15 to 20 seconds. Drain and plunge into the icewater bath. Drain the spinach well and chop coarsely. Place in a medium serving bowl. Whisk together the sesame oil, vinegar, soy sauce, chili paste, ginger and sugar. Pour the mixture over the spinach and mix to combine. Season with salt and pepper to taste and sprinkle with the toasted sesame seeds. Serve at room temperature or cold.

Tips:

  • Prep the spinach in advance: To save time, wash and dry the spinach ahead of time. You can also store it in an airtight container in the refrigerator for up to 3 days.
  • Use a variety of greens: Feel free to mix in other greens like kale, arugula, or baby bok choy for a more complex flavor and texture.
  • Toast the sesame seeds: Toasting the sesame seeds in a dry skillet over medium heat for a few minutes will bring out their nutty flavor.
  • Use a good-quality sesame oil: Sesame oil is the key to the flavor of this dish, so be sure to use a good-quality oil. Look for a dark, nutty oil that is made from 100% sesame seeds.
  • Don't overcook the spinach: Spinach cooks very quickly, so be careful not to overcook it. Otherwise, it will become wilted and lose its vibrant green color.
