MAGGIE'S CRESCENT ROLL CASSEROLE

I love using crescent rolls! This is comfort food at its best. This is very filling and adaptable. I like to use Ore Ida potato rounds instead of the tater tots. It would be very easy to change a few things to your liking. Simple to make. Could be easily doubled using a 9 x 13 pan.Recipe makes about 4 servings.

2 teaspoons butter
4 ounces fresh portabella mushrooms, sliced
1 small onion, chopped
1/2 teaspoon minced garlic clove
1 lb ground beef
1/2 cup sour cream
4 ounces cream cheese
1 teaspoon Mrs. Dash onion and herb seasoning
0.5 (8 ounce) bag tater tots
1 cup cheddar cheese, shredded
1 (8 ounce) can crescent rolls

Steps:

  • Preheat oven to 450 degrees F.
  • Bake tater tots on a baking sheet for about 8 minutes.
  • While potatoes are baking, melt butter in a large skillet. Saute mushrooms,onion and garlic about 4 minutes. Remove from skillet.
  • In same skillet brown ground beef.Mix in mushrooms, onion and garlic. Add sour cream,cream cheese and seasoning.Mix well and remove from heat.
  • Reduce oven temperature to 350 degrees F.
  • Place 1/2 crescent rolls in bottom of 9 x 9 pan leaving the dough in the rectangle shape. Seal seams together.
  • Place potato rounds on top of crescent rolls. Put meat mixture on top of potato rounds. Add shredded cheese. Top with remaining crescent rolls again leaving dough in rectangle shape and sealing seams.
  • Bake for about 25 minutes or until golden brown.
  • Enjoy.

I have been eating these rolls since I was a kid. I don't know where they started out, but I remember my grandmother making them. They freeze well and taste great split open and toasted.

2 ¼ teaspoons active dry yeast
¼ cup warm water
1 cup scalded milk, cooled
½ cup prepared mashed potatoes
¼ cup vegetable shortening
¼ cup white sugar
1 ½ teaspoons salt
1 egg, beaten
4 ½ cups all-purpose flour

Steps:

  • Dissolve yeast in warm water in a bowl. Let stand until the yeast softens and begins to form a creamy foam, about 5 minutes.
  • Mix milk, mashed potatoes, shortening or butter (see Cook's Note), sugar, and salt together in a bowl; add yeast mixture and egg. Stir 2 cups flour into the milk mixture until incorporated. Stir in remaining 2 cups flour to make a soft dough.
  • Turn dough onto a lightly floured surface and knead until smooth and elastic, about 7 minutes. Place dough in a lightly greased bowl, turning once to coat all sides of dough with oil. Cover bowl and put in a warm place until dough has doubled in size, about 1 hour.
  • Punch dough down and shape into a ball. Cover the bowl and let rest for 10 minutes.
  • Preheat oven to 400 degrees F (200 degrees C). Grease 2 baking sheets.
  • Shape dough into 24 rolls and place onto prepared baking sheets; let rise until dough springs back when you touch the side of a roll with your fingertip, about 25 to 40 minutes.
  • Bake rolls in the preheated oven until golden brown, 10 to 12 minutes.
